While I still stick with the experts when it comes to cheddar, blue, and Parmesan, I prefer to make fresh cheeses at home. Why? Most of the simple cheeses I make at home take little equipment, and their pure, sweet flavor is far better than most feta, cream cheese, and chèvre I buy at the store.
