Homemade Vegetable Beef Stew
The weather is starting to turn chilly around here so we decided to make a huge pot of homemade vegetable beef stew for dinner. There is just something magical about a warm mug of soup mixed with some snuggling with the family on a cool fall evening. We jumped in the car and headed out to buy our fresh ingredients to take home and make our fabulous vegetable beef stew. Homemade Vegetable Beef Stew Ingredients 6 large green onions 2 green peppers 1 or 2 cans of diced or whole tomatoes 3 carrots 10 oz or so of mushrooms 1 bunch of celery half a head of cabbage 1 package of Lipton onion soup mix 1 or 2 bullion cubes 1 48oz can of V8 juice Season to taste with salt, pepper, parsley, curry and/or garlic powder **Optional you can add stew meat or ground beef if you would like to add meat to your vegetable beef stew** Directions Start by adding 48 oz of V8 juice to a large pot. Slice green onions and saute in a pan with oil. Cut green peppers into bite size pieces and add to pot. Take outer leaves off cabbage and cut half
