Today I decided to make something with Quinoa. I really love this grain and for those of you who are not familiar with Quinoa, please click on this link below for some information. http://en.wikipedia.org/wiki/Quinoa ~Quinoa Salad Recipe~ Yields- 6 servings Ingredients- 2 cups of cooked quinoa 1 red bell pepper-chopped 2 roma tomatoes- chopped 1 cup of chopped parsley 1 cup of chopped fresh basil 1 cup of chopped fresh mint 1/4 chopped white onion 2 lemons- juiced 1 lime- juiced 1/4 cup of extra virgin olive oil 1/4 tsp of sea salt ground pepper 1 clove of garlic minced Directions- Cook 2 cups of water in a medium sauce pan and boil. Add in 1 cup of quinoa. Cook for about 12 minutes. Remove from heat and add to a large bowl. Add in all the ingredients, and toss with olive oil and lemon juice. Cover and chill for about 1 hour to let the flavors all combine together. Serve with fresh cheese on top, preferably Parmesan. Kali Orexi. Advertisements Related
