My low carb Buffalo Chicken * Christina Says Things
Hello guys! Today I am sharing with you a recipe that I altered from another recipe to fit my eating habits. I am not super into low carb, but it is helping me lose my baby weight. So, if you want to give this a try by all means. (and if you want to try this with bread as a sandwich-which I recommend- I suggest a French roll.) So here is what you’re going to need: recipe feeds two adults 3-4 Chicken breast ( I use boneless)-I cut mine into strips or chunks depending on the mood but you can leave them whole. 1 bottle of Buffalo sauce-I use Franks. (Use as much as you like) 3 slices of Munster cheese or Provolone (I use slices) 2 scallions 1/4 cup of sour cream pepper and salt. Salt and pepper the chicken and then pop into a hot skillet. depending on how you cut your chicken will determine how long to cook it for. When I cut mine the chicken usually takes about twenty minutes to brown. However you cook your chicken just makes sure it is cooked all the way through. While the chicken is cooking-prepare in a small bowl the sauce cut the cheese slices into small square, cut the scallions (however small you want.) combine with the sour cream. Add salt and pepper to taste. Once the chicken is done you can add the chicken to a bowl or leave int eh skillet. Add as much of the buffalo sauce as you want. Allow the chicken to rest in the sauce, while the cause warms up. Now normally at this point I’d say add it to a sandwich with the sauce as a spread! But since we are low carb do not do that. lol place a small amount or however much you are feeling that day, on your plate. Either add the sauce right on top or off to the side. I make a small salad with ranch dressing to help cool down this meal. You could also add celery sticks and some cauliflower. And that is it!
