Vegan Cinnamon and Cranberry Breakfast Biscuits - Jessthetics
I have a confession to make.. I am not a morning person. I’m not good at getting up early and neither am I good at going to bed on time so I’m always in a rush in the mornings. When I have lectures in the out-of-town campus I like to walk, but it takes 40 minutes, and I always end up leaving 30 minutes before my lectures start so I have to power walk and grab breakfast when I get there. Breakfast biscuits are perfect for busy mornings because you can make a big batch one afternoon to last you for the week and they’re very portable! The cranberries, oats and raw cacao in these are full of energy too – perfect for four hour lectures! You will need: 1 mug of oats 1 teaspoon cinnamon 1 teaspoon allspice 2 tablespoons raw cacao nibs 2 tablespoons dried cranberries 1 1/2 tablespoons of melted coconut oil 1 tablespoon maple syrup Preheat your over to 180 degrees c. Then melt the coconut oil and combine all the ingredients together! Add 100ml of hot water and leave the mixture to stand for 5 minutes. Then grease a tray with margarine. After the five minutes is up, squash your oaty mixture into balls and then flatten these balls onto the tray so that they’re cookie shaped. If you have a round cookie cutter, you could roll the mixture flat and cut out the biscuits instead! Bake for 20 minutes and you’re done! These biscuits are seriously easy to make, which is good for busy people like me! I just had an intense three weeks of deadlines, so I’m looking forward to taking it a little easy this week, catching up with all my favourite blogs, and maybe even doing some more baking! Related
