Vegan Orange Tiffin - Jessthetics
I don’t think I’ve ever not been in the mood for tiffin. It was one of my favourite things that we made in cooking lessons at school (we made a lot of cake and pizza.. this was clearly before school’s decided to teach kids how to eat healthily) and it’s the perfect combination of biscuit and cake. It’s sweet without being sickly and indulgent without being too rich. The recipe that I’m going to show you today is a bit more cakey than tiffin is usually, but it’s so tasty and it’s also vegan. My brother’s eaten the majority of this tray of tiffin in two days! Chocolate and orange is one of the best flavour combinations, so I decided to add caramelised oranges to the mixture, although if you wanted a more straightforward tiffin recipe you could easily leave out the caramelised oranges as long as you used 100g less biscuit. You will need: 400g of vegan digestive biscuits, three medium sized oranges, 100g of vegan margarine, 1 tablespoon of golden syrup, 2 tablespoons of brown sugar, two teaspoons of vanilla essence, 100g of raisins and 100g of chopped glace cherries, 100g of vegan chocolate and 100g of vegan orange chocolate (the chocolate I use isn’t marketed towards vegans, but it is dark chocolate, which is vegan anyway!) and 100g caster sugar. We’ll start by doing the caramelised oranges. First you need to use a potato peeler to peel away the zest from one of the oranges. Chop up the zest finely. Then make sure the zest and all of the white stuff is peeled away from this orange and a second one, and discard the peel (so you will have peeled two oranges in total.) Slice your third orange into segments, chop up your two peeled oranges and put all of this into a bowl. To make the caramel, put the caster sugar in a saucepan with 75ml of water. Heat this gently until the sugar dissolves and then boil the water for 10 minutes until the mixture turns golden brown and sticky. Then slowly (be careful, it might spit at you!) add another 75ml of water to the caramel, whilst stirring. Tip in the chopped orange zest and stir for another 5 minutes.
