Very Easy Vegan Peanut Butter Ice Cream - Jessthetics
Okay you guys, so I know this ice cream looks a little bit like baby food, but just hear me out. When you freeze bananas and then blend them, they have the consistency of soft serve ice cream! You can mix basically anything you want into the blended bananas to get healthy(ish) delicious vegan ice cream, and it’s really that simple. Peanut butter is one of my all time favourite flavours, especially in ice cream, and I LOVE snickers bars! (If you haven’t tried a toasted snickers sandwich, you should by the way.) So, vegan peanut butter ice cream made sense. You will need: 3 small bananas (chopped up and frozen for an hour), a tablespoon of wholenut peanut butter and a tablespoon of maple syrup. And a blender! First blend your frozen bananas with the maple syrup until smooth. Then heat up the peanut butter in a saucepan on a low heat. You don’t want to cook it, it just needs to be runny so that you can stir it through your ice cream. Once the peanut butter is runny, mix it in with the blended banana. You don’t need to mix them together too thoroughly – peanut butter streaks are tasty too! Pop the mixture back in the freezer for half an hour to cool down the peanut butter, and then serve! I will definitely be making this again. I’m a big fan of snacking and this snack is tasty and healthier than dairy ice cream! Plus, there’s none of the churning required for dairy ice cream and you don’t need an ice cream maker. Win win!
