Spring G-and-Tetley Tea
Warmer days are en route and that means lots of time for sundowners!My favourite drink these days is gin and tonic so I decided to see if I could put my own twist on this by making my own infusion using Tetley's new Lemon tea - and produced the most awesome result!Did a bit of research online first and adapted a recipe from The Kitchy Kitchen - so here is mine:FOR THE INFUSION YOU NEED:- 2 cups gin - I used Bombay Original as I wanted something that has no detectable infusion in it and this is a great, reasonably priced dry gin.- 2 tablespoons Tetley Lemon Tea leaves - open the bags and use the dry leaves.- A jar with a tight lid - I used a Consol pickling jar.TO SERVE:- 1/2 cup lemon juice - I added this as wanted it to have a definite lemony taste.2 tablespoons simple syrup (you make this by boiling 1 cup of white sugar with 1 cup of water until the sugar has dissolved).4 cups ginger ale - I used Schweppes.METHOD:Add the 2 cups of gin to the jar, then add the dry tea leaves and seal for at least a week…
