Apple Cheddar Galette - Hell Yeah It's Vegan!
Since I grew up in New England, one of my favorite parts of fall is going apple picking. Apples right off the tree exist in a different dimension than those that’ve been shipped across the country (or farther) to sit on grocery store shelves. So I always haul back a zillion apples and cook up as many kinds of apple-based foods as I can while the season lasts. If you’re looking for a new twist on apple pie, I highly recommend this rustic apple cheddar galette. My grandfather was apparently pretty awesome in his youth. Growing up in Kansas during the Depression, he left home young, hopped trains around the country, drank a lot of beer, and drove truck. He used to build toys for the neighborhood kids from scratch, and totally believed in trash-picking. Something tells me that if he were still alive today, he would approve of certain aspects of my lifestyle, or at very least think they were funny.
