Smoked Beef Brisket
Preheat smoker to 225°F. 6 - 8 lb brisket with any excess fat trimmed off the top of the brisket. Using your favorite beef rub, apply liberally to the entire brisket. Place brisket in smoker cook for 3 hours. Place in aluminum foil pan and add 8 oz. of your favorite marinade. Cover the pan tightly with aluminum foil and place back in the smoker. Continue cooking until internal temperature reaches 165°F to 170°F. Take pan out of the smoker and let brisket stand. Remove brisket from pan and cut 1/4” slices against the grain. Use juice from pan to pour over sliced meat or for dipping.
