Christmas Persimmon Jam
Christmas Persimmon Jam--- For years a persimmon tree has grown in our front yard, and the comment has been made that we should try the beautiful fruit. This week the tree was laden with bright, orange persimmons. So....we harvested the bounty and decided on old fashioned jam. Persimmon jam is a wonderful treat on homemade biscuits and butter. Let's make some Persimmon Jam! INGREDIENTS: 8 cups prepared fruit 2 cups apple cider 1 cup lemon juice 12 cups sugar 2 tbsp. cinnamon 2 packages pectin DIRECTIONS: Start with fresh, ripe (softish) persimmons. Wash and cut off any brown spots. Peel and cut the fruit in half. Remove the pits and cut into small pieces. In a large saucepan, add the prepared fruit ,apple cider, and lemon juice. Bring to a slow boil. Cook until fruit is soft and beginning to mush a little. Place in a food processor and puree. Return mixture to saucepan. Add sugar, pectin, and cinnamon. Stirring constantly, bring to rolling boil. After it begins to boil, continue at a hard boil for 1 minute. Remove from heat, and allow 5 minutes for jam to cool. Spoon into sterilized jars and seal. Refrigerate or put into a hot water bath for 10 minutes. ENJOY!!!We have Christmas Persimmon Jam!
