Coconut Rum Pecan Chocolate Pie (GF)
Gluten-Free Coconut Rum Pecan Chocolate Pie (Oh my!)--- Perfect for the holidays, this decadent pie takes a classic to an entirely different level. The coconut rum is so yummy combined with the chocolate and pecans! In addition, it's gluten-free! Let's make some pie! INGREDIENTS: 2 9-inch gluten-free frozen pie crust 2 cups dark corn syrup 1 cup butter 1 cup cane sugar 8 large eggs 3/4 cup coconut rum 1/4 cup salt 2 cups semi-sweet chocolate chips 2 cups whole pecans DIRECTIONS: Preheat oven to 325 degrees F. In a sauce pan over medium heat, combine the sugar, butter, corn syrup, rum, chocolate chips, and salt. Heat until the butter melts and the sugar dissolves. Set aside to cool. In a medium mixing bowl, whisk the eggs and slowly add the chocolate mixture. Whisk constantly, then add the pecans. Pour the mixture into the pie shells. Bake for 50 minutes. Viola!! We have Coconut Rum Pecan Pie!!
