Gluten-Free Beef Tacos
Gluten-Free Beef Tacos--- EVERYONE KNOW HOW TO MAKE TACOS, right? NOT ALWAYS. Tacos are one of those tricky foods for those of us with gluten sensitivity or celiac disease. For starters, the shells must be made from corn (with no added flour), and the seasoning many times contains wheat as an ingredient, so the mix needs to be confirmed as gluten-free. Eating out can be a gluten land mine, and sometimes the comfort and peace of mind of knowing the meal is safe is immeasurable....and the leftover snacks are a good thing too! The added bonus of a super-quick, super-easy meal is a plus. Let's make some gluten-free tacos! INGREDIENTS: 3 lbs. ground hamburger 2 16 oz. cans refried beans 3 1.25 oz. gluten-free taco seasoning (we used McCormick gluten-free taco seasoning) GF corn taco shells 2 cups shredded cheddar 3 cups shredded lettuce 2 tomatoes,diced (or Pico de Gallo) 1 cup chopped onion as a topping sour cream salsa guacamole DIRECTIONS: In a large skillet on medium to high, cook hamburger for 5 to 6 minutes (you can add onions at this point but my kids hate onions), until meat is brown. Add the gluten-free seasoning and 2 cups water. Stir and simmer 10 minutes or until liquid is absorbed. Add refried beans and continue to heat until beans are blended with hamburger and seasoning. Warm gluten-free taco shells according to directions. Spoon in the meat and garnish with lettuce, tomatoes, cheese, chopped onion, sour cream and salsa, and maybe some guacamole. VOILA! We have gluten-free beef tacos!
