What a view! The blue-green waters of Lake Superior stretch out from the dramatic cliffs at Pictured Rocks National Lakeshore in Michigan. Lake Superior is the largest, coldest and most pristine of the Great Lakes. It has the largest surface of any freshwater lake on Earth and it is the third largest lake by volume. Storms, snow, fog, humidity, temperatures and wind generated from the lake impact every park ecosystem, causing dramatic seasonal changes. The multicolored cliffs that give the park its name rise 200 feet above the lake’s turquoise waters in some places, promising amazing views. Photo by National Park Service.

Air Fryer Lentil Falafel
crunchy, fragrant, earthy, high fiber, vegan, vegetarian, gluten-free, excellent source of plant protein, vitamins, and minerals
Recipe~
- 2 lbs lentils, soaked for 6-8 hours, rinsed and dried
- 1 medium onion, minced
- 5-6 cloves of garlic, minced
- ¼ cup parsley, chopped fine
- ¼ cup cilantro, chopped fine
- 2 ½ tsp salt (take a small taste to be sure this is enough for you, this is a LOT of beans)
- 2 TBSP cumin
- 1 ½ tsp ground cardamom
- pinch of clove
- pinch of nutmeg
- ½ tsp black pepper
- ½ tsp cayenne
- 3-4 TBSP chickpea flour (depending on moisture released from lentils and vegetables)
Directions~
- Soak lentils in water; covered by at least a few inches, for at least 6 hours. Do not cook them. Rinse them after soaking and allow to air dry.
- Prepare all vegetables and herbs and set them aside in a large mixing bowl.
- Combine all spices and salt in a small bowl and set aside.
- In a food processor, pulse the lentils until they are ground into a small crumb.
- Add the ground lentils to the bowl with the prepared herbs and vegetables, mix to combine.
- Add the spices and salt to the bowl, mix to combine.
- Add the chickpea flour in batches and mix to combine. Stop when the mixture can hold a stable form. The mixture should remain fairly wet but shouldn’t easily fall apart.
- You may have to experiment with your own air fryer, but my GoWise 5.8 prepared perfect falafel in 10 minutes on 380F with no added oil! You could certainly add a bit of drizzle for additional moisture and Medeterrian flair but I was pleased without!
