Rouladen with blaukraut. Sauerbraten with spaetzle (pronounced schpet-zluh). Kassler ribs with sauerkraut. Those were the foods I grew up with. They were a source or nourishment and identity as a child with German parents.
Then I became a vegetarian and all those foods I loved so much disappeared from my plate.
Instead, I live vicariously through my omnivore husband. When we travel to Germany, I tell him what I think he should order at a restaurant because if I was still a meat eater, that’s what I’d have.
This is Zwiebelrostbraten (steak with fried onions and sauce) with spaetzle from a recent trip and without a doubt, my favourite German meal growing up.
