Do It YourSwift: Chai Tea Cookies

Want to make Taylor’s chai tea cookies that she served at the 1989 secret sessions? Here’s the original recipe that she posted on Tumblr!

The “Easy” Way:

Make sugar cookies from a sugar cookie mix and cut open a packet of chai tea and pour it into the batter as you make it. Bake as directed.

The “Hard” Way:

½ cup (1 stick) unsalted butter, at room temperature

½ cup vegetable oil, such as canola or sunflower oil. I used almond oil.

½ cup granulated sugar, plus additional for sugaring tops

½ cup powdered sugar

1 large egg

2 teaspoons vanilla extract, or the seeds of 1 vanilla bean

2 cups all-purpose flour

½ teaspoon baking soda

¼ teaspoon salt

First, preheat the oven at 350°F. Then, beat the butter in a large bowl on medium speed for about a minute. Add the vegetable oil, granulated sugar, powdered sugar, egg, and vanilla. After that, cut one chai tea packet open and empty the crushed up tea leaves into the batter. Stir in the flour, baking soda, and salt using a wooden spoon or a mixer on low. Refrigerate the dough for an hour or freeze for 15 minutes and make into cookies on a cookie sheet. Bake for 8-10 minutes for smaller cookies.

For icing:

Mix 1 cup powdered sugar with ¼ teaspoon of nutmeg, ¼ teaspoon of cinnamon and 3 tablespoons of milk or eggnog. Once the cookies are baked and iced, you can lightly sprinkle cinnamon over them. ★
