Tired of boring chicken? Then you need to try Peanut Butter Addictive Chicken!

2 TBSP Natural Peanut Butter
½ cup Bragg Soy Seasoning
½ cup Lemon or Lime Juice
2 TBSP Curry Powder
2 Cloves Garlic Chopped
1 tsp Hot Pepper Sauce
6 Skinless Chicken Breasts, cubes or strips

Mix all ingredients except for chicken. Marinade chicken breasts for minimum 2 hours. Barbeque or grill.


This was Fatima Leite Kusch’s second time competing at The WBFF World Championships. Once again she managed to surprise the audience with her very creative theme wear. She came on stage completely ‘wrapped’ in her golden cocoon leaving the judges questioning. Once she reached centre stage her golden cocoon sprung into beautiful lace wings. The entertainment did not stop there. During Fatima’s T-walk she released her large lace wings and became a butterfly with baby wings. Her theme wear made the crowd go crazy. Fatima Leite Kusch did it again!

Eat Clean Diet Feature!!!

You may have read a post that I wrote a couple days ago celebrating my friend and teammate Theresa Lopetrone aka The Fame for her recent accomplishments and for and how she has inspired me to live my dreams.

Theresa has had a phenomenal year with two published photographs in Oxygen Magazine one in the February 2012 issue the Future of Fitness and the second in Oxygen’s Abs Special Issue that just came out yesterday…have you purchased your copy?   In it, Theresa reveals her journey to weight loss and how Tosca Reno and the Eat Clean Diet Books were monumental in her progress to achieve her goal.  She is now shooting for the stars and will be making her first WBFF debut in June.

As a teammate, Theresa shows constant support, compassion, encouragement and sincerity.  She has set her sights for goals that are very important to her and she is making them happen.  I am so proud of her and I know that our coach and everyone on our team is rooting for her success.

Our beautiful coach, Fatima (featured above) has been the inspiration behind both mine and Theresa’s success in everything from our training and meal programs.  She is a WBFF pro, has also been featured in Oxygen Magazine and the Abs Special issue, and is a coach who works with each of us based on our own needs and goals.  I am so grateful to her for everything she has done to help me achieve my my dream body, become a better athlete and get me stronger in my recovery.

You may have heard that Theresa was featured yesterday on Tosca Reno’s blog and she announced last week that she would be a guest blogger for the Eat Clean Diet Vegetarian Cookbook (you may recall my last post on vegetarianism where I mentioned it as well) and she has been a busy bee preparing some of her favourite recipes from the Eat Clean Diet Vegetarian Book ever since, and she has done a fabulous job, might I add (some of those images look like they belong in the book!)

As you also may have read, I have just received an email only days ago congratulating me for being selected as a guest blogger on Tosca’s site as well as to participate in supporting the promotion of the Eat Clean Diet Vegetarian Cookbook as well!  How incredible!  Out of a small handful of blogs both mine and my amazing teammate’s have been selected!

Theresa was very excited for me too and she already has a wonderful plan as to how she is going to be sharing the recipes and creating a challenge out of it.  What makes this even more interesting is that Theresa, although skilled at everything she does, is a fitness model and is planning to compete, she is a not a vegetarian but definitely loves vegetarian/pescatarian food whereas my focus lies more in fitness combined with yoga, running and cooking and I am a vegetarian/pescatarian so these variations will be fascinating to see as they unfold.

Since I received my news, I have been planning on coming up with a creative way that will highlight my specific skills to make it unique and interesting for you, seeing as how Theresa and I both have some people from the same audience thanks to the fact that she introduced me to the tumblr world! 

Theresa and I have discussed our plans with one another as to how we can make this interesting for you and I will be sharing my plan with you in the next few days…very exciting!

Broccoli Soufflé

Broccoli (cooked, cooled and mashed or blended in a food processor)
Diced Onion
Egg Whites (whipped until stiff peaks form)
Salt/Pepper (to taste)

Cook onions in a heated, non-stick skillet with Pam until soft. Add garlic and let cook until soft. In separate bowl add garlic and onions to Broccoli (mash) stir to mix. Gently fold in egg whites and scoop into oven safe bowl that has been sprayed with Pam. Bake at 375 degrees spongy in the middle.

Feeling Saucy for Salmon

This sauce is super fast and easy.


½ a cucumber or 2 mini cucumbers
2 tbs chopped fresh dill
1 garlic clove pressed or chopped
½ cup plain yogurt 

Coarsely grate cucumber. Squeeze out the moisture. Stir the cucumber, dill and garlic into yogurt. Enjoy!

You can also put a small splash of lemon into it as well, for extra zing.

Makes 6 servings.


1/3 cup best quality olive oil
2 large butternut squash
1 sweet onion, cut into large chunks
1 bulb garlic
½ tsp rice bran oil (if you don’t have olive oil will do)
2 cups low sodium, low fat chicken or vegetable stock
2 tbsp fresh lime juice
fresh black pepper to taste
ground nutmeg

1. Preheat over to 350 F. Prepare a large roasting pan by pouring the oil into it, letting it coast the bottom. Cut the squash in half and remove seeds and string. Place squash in roasting pan, cut side down. Prick the skins with a sharp knife. Place onion around the squash. Using a sharp knife cut the top of the garlic bulb off and drizzle with rice bran oil. Place in the roasting pan with the other vegetables. Bake for 45 minutes to an hour or until tender. Remove and let stand.
2. Scrape baked squash into a large stock pot. Add the roasted onion and squeeze roasted garlic flesh in as well. Add chicken stock and lime juice and bring to a boil. Reduce heat and simmer for 15 minutes. Using a hand blender, puree the soup until it is evenly smooth. Ladle into soup bowls and garnish with nutmeg and pepper.

You can use this recipe to make other squash varieties.

LOVE AT FIRST BITE: Pesto and Burgers
8oz Spinach Leaves (10 cups packed)
2 Garlic Cloves, peeled
½ tsp Grated Lemon Peel
Large Pinch of Dried Crushed Red Pepper
4 Cups fresh Arugula leaves
3 Tablespoons Pine Nuts
1 tsp Fresh Lemon Juice
1/3 Cup Extra Virgin Olive Oil
3 TBSP freshly grated Parmesan Cheese ( I used the Soy Cheese Parmesan Version)

1 ¾ Pounds Lean Ground Beef

Microwave spinach in bowl for 1-1.5 minutes.

Combine GARLIC, LEMON PEEL, CRUSHED RED PEPPER in Processor. Blend until garlic is finely chopped. Add SPINACH, 2 cups ARUGULA, PINE NUTS, LEMON JUICE, process until pureed. With machine running gradually add OLIVE OIL in thin stream and blend until smooth. Mix in PARMESAN.

Combine GROUND BEEF, PESTO (6 TBSP). Mix by hand, then form patties.

Cook on BBQ. Toast buns. Build burger with pesto, patties, cheese, tomato, arugula.

Welcome Brandi Gagnon as Support Staff for Team Blessed Bodies!

Team Blessed Bodies Welcomes New Support Staff – Brandi Gagnon

Brandi will be assisting with Client Support for clients using the FitnessPrint program as well as Team Blessed Bodies members.

Brandi has been team member since 2007. She is one of our senior members and has a reputation for being most consistent off season. She is a ‘Domestic Goddess’ and Fitness Instructor, a mother of two little girls and a fitness model competitor. Brandi is a caring and kind person who is willingly shares her own experiences to help other members of the team. If there is a problem, we know we can rely on Brandi to solve it!

Get to know Brandi better…Interview by Blessed Bodies with Brandi
BB: When did you start working with Team Blessed Bodies and what inspired you to do so?
BG: I started with the Fitness Print program in Spring of 2007. I became part of Team Blessed Bodies in Fall of 2009 when I decided to start training for my first competition in 2010.

I’ve always followed competitors in Oxygen Magazine since the late ‘90’s. So it’s always been of interest to me. Then during 2008-2009 watching my

Coach (Fatima) and a mutual friend compete really triggered it for me.

BB: What is your favorite cheat food?
BG: Not sure I have a specific favorite cheat food, but chocolate is high up there ; )

BB: How often do you indulge?
BG: If I’m staying on track during off season I’ll have a cheat meal 1-2/wk. During training for a competition I won’t, but if I feel I really need it then 1/wk. Depends on where my body is at and what my coach says is ok.

BB: What is your favorite non-cheat food? 
BG: My favorite non cheat is grape tomatoes, red peppers and yams.

BB: What is your favorite go to menu for the day?
BG: My favourite go to menu for the day usually looks like this:

Meal 1- cereal/vanilla protein mixed with skim milk/mixed berries cinnamon. Matcha green tea

Meal 2 - egg whites with mushrooms and zucchini/udos oil

Meal 3 - shrimp/broccoli slaw/shredded carrot/udo’s oil/peanut butter/ginger

Meal 4 - grilled sprouted whole grain bread/mini babybell cheese (lite)/chicken

Meal 5 - chicken or salmon/broccoli/yams/udos oil

Meal 6 - frozen chocolate protein powder/pb/½ banana. and black tea

(If hungry in between will snack on grape tomatoes, red peppers and cucumbers).

I also drink 4ltrs of water a day.

BB: What do you love most about being part of Team Blessed Bodies?
BG: Best thing about being apart of Team BB is well, so many things, but the biggest thing is the team dynamics. It’s amazing. Unless you’re apart of it, it’s really hard to grasp how great it really is and how it plays such a huge role in your success :)

BB: What do you love most about the Fitness Print plan?
BG: What I love about the Fitness Print plan is how you don’t really have to cut anything out of your eating plan. It’s more about making cleaner choices. It’s about the quality of food you put into your body. It makes you so much more aware of the what your putting into your body. I also love that you still get to indulge in guilt free (term taken from teammate Theresa) meals aka: cheat meals.

BB: What is your biggest challenge with the plan?
BG: Biggest challenge on the plan for me is depending on the time of the month is the cravings. I just try and find a cleaner alternative or if I still have a guilt free meal available I’ll use it. Usually it’s chocolate, so the norm for me is to have a coffee with unsweetened cocoa powder and add my own sweetener (Stevia) or a tea with sweetener and sprinkle cinnamon on top. This way I don’t use up my guilt free meal ;)

BB: What is your greatest accomplishment while working with Team Blessed Bodies?
BG: Greatest accomplishment for me I think was just getting out there on stage for my first time and proving to myself, that I could do it. Placing 3rd was just a cherry on top! I will also add doing my 2nd show was pretty major for me too. I got on stage 7months after having back surgery. Again it was about proving to myself it could be done and to show others it is possible :)

BB: What are your current fitness goals?
BG: Current fitness goal is to build muscle overall. I’m looking to compete in late spring of 2013.

BB: What is your competition history?
