Tired of boring chicken? Then you need to try Peanut Butter Addictive Chicken!

2 TBSP Natural Peanut Butter
½ cup Bragg Soy Seasoning
½ cup Lemon or Lime Juice
2 TBSP Curry Powder
2 Cloves Garlic Chopped
1 tsp Hot Pepper Sauce
6 Skinless Chicken Breasts, cubes or strips

Mix all ingredients except for chicken. Marinade chicken breasts for minimum 2 hours. Barbeque or grill.

This was Fatima Leite Kusch’s second time competing at The WBFF World Championships. Once again she managed to surprise the audience with her very creative theme wear. She came on stage completely ‘wrapped’ in her golden cocoon leaving the judges questioning. Once she reached centre stage her golden cocoon sprung into beautiful lace wings. The entertainment did not stop there. During Fatima’s T-walk she released her large lace wings and became a butterfly with baby wings. Her theme wear made the crowd go crazy. Fatima Leite Kusch did it again!

Broccoli Soufflé

Broccoli (cooked, cooled and mashed or blended in a food processor)
Garlic
Diced Onion
Egg Whites (whipped until stiff peaks form)
Salt/Pepper (to taste)

Cook onions in a heated, non-stick skillet with Pam until soft. Add garlic and let cook until soft. In separate bowl add garlic and onions to Broccoli (mash) stir to mix. Gently fold in egg whites and scoop into oven safe bowl that has been sprayed with Pam. Bake at 375 degrees spongy in the middle.

Feeling Saucy for Salmon

This sauce is super fast and easy.

INGREDIENTS:

½ a cucumber or 2 mini cucumbers
2 tbs chopped fresh dill
1 garlic clove pressed or chopped
½ cup plain yogurt 

PREPARATION: 
Coarsely grate cucumber. Squeeze out the moisture. Stir the cucumber, dill and garlic into yogurt. Enjoy!

You can also put a small splash of lemon into it as well, for extra zing.

ROASTED BUTTERNUT SQUASH SOUP

Makes 6 servings.

Ingredients:


1/3 cup best quality olive oil
2 large butternut squash
1 sweet onion, cut into large chunks
1 bulb garlic
½ tsp rice bran oil (if you don’t have olive oil will do)
2 cups low sodium, low fat chicken or vegetable stock
2 tbsp fresh lime juice
fresh black pepper to taste
ground nutmeg

Preparation:
1. Preheat over to 350 F. Prepare a large roasting pan by pouring the oil into it, letting it coast the bottom. Cut the squash in half and remove seeds and string. Place squash in roasting pan, cut side down. Prick the skins with a sharp knife. Place onion around the squash. Using a sharp knife cut the top of the garlic bulb off and drizzle with rice bran oil. Place in the roasting pan with the other vegetables. Bake for 45 minutes to an hour or until tender. Remove and let stand.
2. Scrape baked squash into a large stock pot. Add the roasted onion and squeeze roasted garlic flesh in as well. Add chicken stock and lime juice and bring to a boil. Reduce heat and simmer for 15 minutes. Using a hand blender, puree the soup until it is evenly smooth. Ladle into soup bowls and garnish with nutmeg and pepper.


You can use this recipe to make other squash varieties.

LOVE AT FIRST BITE: Pesto and Burgers
SAUCE
8oz Spinach Leaves (10 cups packed)
2 Garlic Cloves, peeled
½ tsp Grated Lemon Peel
Large Pinch of Dried Crushed Red Pepper
4 Cups fresh Arugula leaves
3 Tablespoons Pine Nuts
1 tsp Fresh Lemon Juice
1/3 Cup Extra Virgin Olive Oil
3 TBSP freshly grated Parmesan Cheese ( I used the Soy Cheese Parmesan Version)

1 ¾ Pounds Lean Ground Beef

Microwave spinach in bowl for 1-1.5 minutes.

PESTO
Combine GARLIC, LEMON PEEL, CRUSHED RED PEPPER in Processor. Blend until garlic is finely chopped. Add SPINACH, 2 cups ARUGULA, PINE NUTS, LEMON JUICE, process until pureed. With machine running gradually add OLIVE OIL in thin stream and blend until smooth. Mix in PARMESAN.

Combine GROUND BEEF, PESTO (6 TBSP). Mix by hand, then form patties.

Cook on BBQ. Toast buns. Build burger with pesto, patties, cheese, tomato, arugula.

Brandi, our Fitness Model competitor and Mother of two would like to share  her recipe for CLEAN Tandoori Chicken                                                                    
“There’s quite a few ingredients, but it is easy to make. I’ve made this several times for guests and it’s always a hit!

8 boneless skinless chicken breast
2 tbs oil
½ cup chopped white onion
2 tbs chopped garlic
2 tbs chopped ginger
1 tsp finely chopped serrano or jalapeno pepper (stem and seeds removed)
1 tbs paprika
1 tsp ground cumin
1 tsp tumeric
1 tsp ground coriander
1 tsp garam masala (it’s an indian spice, so it may be in the authentic aisle of your grocery store)
½ tsp cayene
½ cup plain yogurt
1 tbs fresh lemon juice

Cut diagonal slices 1 inch apart. ½ inch deep on thicker chicken breast. Put chicken in a baking dish.

In a blender combine oil, onion, garlic, ginger, pepper until paste.
Add paprika, cumin, turmeric, coriander, garam masala & cayenne, process until well blended
Add yogurt and lemon juice, process into a smooth sauce, scrape down the sides to combine all ingredients.
Pour marinade over chicken, turn to coat and rub into the slits.
Cover tightly with plastic wrap and refrigerate for min 4hrs to 24hrs.

Place chicken on a baking sheet and bake at 425 for 35 minutes. Make sure to get all the sauce on the chicken.

You can also grill this, indoor grill or BBQ (makes a bit of a mess on the grills), but tastes awesome! Cook for 8 - 10mins on first side. Turn and baste as needed. Cook second side 8 - 10 minutes or until chicken is done. Continue this process until chicken is done (25-30minutes)”

Our thoughts are with our athlete client, Tanya, as she has recently lost her father, Wolfgang Geisinger.

Today her and her family will be celebrating the fruitful life her father had.

Here are some words from Tanya about her hero.

“My Father was a very successful inventor, business man, some call him a pioneer but to me he was dad.

At 23, dad decided to move from Germany to Quebec & start a new life. He had barely any money, he hardly spoke any English or French. He promised mom that he would build a good life for them & the family they would have. He kept his promise. They were happily married 44 yrs. In that time he built & ran 2 very successful companies, had my brother & adopted me. It seemed like he was never home, he worked so hard for most of his life but he always found the time for us. Dad wanted to open our eyes to the world we lived in. We traveled, experienced different cultures,  camped, fished, ate in fine restaurants around the world or ate home cooking in a hut somewhere in the middle of nowhere. These are memories I will cherish forever & will continue to do with my children.

I learned from him that if you want something bad enough you have to believe in yourself & commit with all your heart. That fear is something I’ve learned & that I need to face those fears & get passed them to move forward. Don’t listen to anyone else just what’s in your heart. Success won’t come to you princess, you have to go after it! There is no failure, your family will stand behind you no matter what, we’re proud of you.

 

It’s been 37 days now since he passed. Some days are harder than others trying to accept that he’s really gone. I’m preparing for what will be the biggest competition I’ve ever done, The WBFF Worlds. I admit I’m a little nervous .But when I’m tired or when I start getting negative thoughts I think about dad & what he’d always say to me when things got tough “ We will fight ditch to ditch, We will never Give up!”
I won’t give up & pursue my dreams. Life’s too short not to enjoy & live to the fullest.”
