Jalapeno Popper Wontons

Ingredients:

  • 1 package refrigerated square wonton wrappers
  • 1 8-ounce package cream cheese, softened
  • 3 jalapenos, seeds and ribs removed, finely chopped
  • ½ cup shredded cheddar cheese
  • Vegetable oil for frying
  • Coarse salt

Instructions:

1. In a bowl, combine cream cheese, jalapenos, and cheddar cheese. Arrange wontons in a single layer on a baking sheet.

2. Add 1 teaspoon of the filling to the center of each wonton (don’t overfill them). Dip your fingers in a bowl of water and run your wet fingers around all edges of each wonton. Fold the wontons over the filling, pinching the edges to seal to make a triangle and removing any air bubbles.

3. Fry wontons in batches in hot oil until browned and crispy. Drain on paper towels and sprinkle with coarse salt. Serve warm.

i have some friends coming over tomorrow so i made a giant batch of spicy chicken dumplings!! 🌶 i cooked a few them tonight to try, and they’re amazing! only 43 calories & 3g of protein each!

the filling is: chicken, fried onion and red pepper, tex mex cheese, garlic, thyme, red pepper flakes, cayenne pepper, and smoked paprika! all wrapped up in a wonton wrapper!

I walked up the stairs grudgingly to my apartment on the third floor. Time flew by so quickly from the hours spent in my lecture hall, surrounded by hundreds of students complaining about their exam scores. I reached up tiredly to punch in the numbers on my digital door lock.

As I entered the apartment, I threw off my shoes, tossed my bag to the corner of the couch, and sat down with a sigh. I buried my head in my hands and tousled my hair roughly.

*Also, there are a ton of spices in this dish. I don’t know my parents had all of them, but if you don’t, I think you will still be fine. Just spice to taste.*

Baked Samosas With Potatoes and Peas

NOTE: MAKES AROUND 24 WRAPPERS!!!!!!

Ingredients:

  • 4 medium potatoes
  • ½ cup frozen peas
  • ½ an onion, finely chopped
  • 3 cloves of garlic
  • 1 tsp Red Chili powder
  • ½ tsp Cumin Powder
  • 1 tsp Chat masala or Curry powder
  • ½ tsp Dry mango powder / Amchur
  • ¼ tsp Garam masala
  • ½ tsp Turmeric powder
  • ½ tsp Cumin
  • Wonton Wrappers (found in a supermarket)
  • Water

Instructions:

  1. Make mashed potatoes: peel potatoes, cover with water, put pot on stove and boil until potatoes are soft. Drain water, but leave around half a cup. Mash the potatoes and add the water to make them fluffier. Set aside.
  2. Heat onions and garlic in a pan with oil until translucent. Add peas and potatoes. Add all of the spices and cook for a few minutes. Set aside to cool a little.
  3. Preheat oven to 350. 
  4. Add about a tablespoon of filling to the wonton wrapper. Wet the edges and fold into a triangle (the original recipe tried to get me to do something fancy, but I said “No way, Jose. Triangles will do for me). Line up on baking sheet, making sure the edges are well closed.
  5. Bake for 15(ish) minutes until the wrappers are golden brown. 
  6. Enjoy. YUM YUM.

Made these vegan fajita bites as we had company over. I also made vegan sliders and apple pie samosas but didn’t get the chance to snap a picture 😭(I will be sure to next time so I can jot down the recipe as it was all very improvised 😅)
It was al last minute so I had to rustle up canapés from what we had around to house 😂

Ingredients
1 old el'paso fajita kit (or equivalent)
2 bell peppers (I used a red and a yellow)
1 onion
Minced garlic ( I used 2 of the frozen blocks)
Vegan ‘chicken’ ( 300g. Vegan quorn fillets work well)
Vegan cheese
Spring roll wrappers ( wonton, dumpling cases would work fine too. They are in the frozen section. I got mine in Asda. If you get the large spring roll cases just cut into 4)

Method.
If using frozen quorn fillets microwave as instructed on the packet for 2 minutes cut into strips about the size of your pinky finger and set a side.

Dice onion and add to a lightly greased pan along with the garlic and sweat down until translucent.

While the onions cook down chop the peppers about the same size as the 'chicken’

Add the chicken and peppers into the pan and give a gentle mix careful not to break the pieces. Add the seasoning from the kit and cook while gently mixing ( I found a spatula the best for this)

Just before it is completely cooked add ½ -¾ of the salsa and again mix then turn of the heat and leave to cool.

Whilst the fajita mix cools cut the cheese into sticks about the size of the chicken and about a £1 in thickness.

If required cut the spring roll wrappers into 4

One the mix of cool place 1 pice of chicken, some of the peppers and a piece of cheese on top of one of the squares on the side closest to you. Wrap as you would a spring roll or burrito. Seal with a little water and repeat.
(Optional) spritz with a little spray oil.
Bake at about 190’ for 10-20 minutes or until crispy.
Serve with salsa and guacamole 🤘🤤😍

single serving lasagna cups

ground turkey (or any ground meat/meat substitute of your choice really) 
tomato sauce
wonton wrappers
part-skim ricotta cheese
shredded mozzarella cheese
grab a muffin tin
preheat your oven to 350 degrees 

season/brown the ground turkey and then mix in about a cup of your sauce. 
take your wonton wrappers and fit them into each of the cups on the muffin tin.
add a tablespoon of the sauce/meat mixture to each wonton. 
add half a tablespoon or so of ricotta cheese and be sure to spread it out so it’s not just in one clump.
add another wonton wrapper.
layer in another tablespoon of the sauce/meat mixture and then sprinkle some shredded mozzarella on top
bake for 10-12 minutes or until the cheese looks melted and the edges of the wontons are golden brown.

≈ 120 calories/10g protein per lasagna!

Lasagna Cups

Line each well of a muffin pan with a wonton wrapper. Spread a thin layer of marinara sauce on the noodles and then sprinkle mozzarella and parmesan cheeses on top. Place another layer of noodles on top of the cheese. Continue layering with sauce, cheese, and noodles until the well is almost full, finishing with cheese as the top layer. Bake at 375°F for 18 to 20 minutes.

Hey friends! I am so sorry that I missed an update last week, I had every intention of getting a chapter up and then things just got too crazy with finishing up finals and moving home from school. Thank you for all of your encouraging comments, I didn’t get a chance to reply to everyone last week but know that I did read them and I love hearing your feedback. The good news is that I am home now on summer break and I have way more time to write so we should be back to regular weekly updates until the story is finished :) Enjoy the chapter!


“What is he doing?!” Felicity yelled at the television. “You can’t put something in the ice cream machine with less than five minutes left!” She pressed her face into his shoulder and mumbled, “I can’t watch this, this is too stressful.”

Chuckling, he pointed out, “You do realize it doesn’t affect your life in any way if he doesn’t get his dish plated?”

He found it amusing that she was more stressed out watching Chopped than she had been that week juggling exams in a few of her classes and meeting with new clients. It was late Saturday night and she had made it to the end of the marathon of a week, so they were enjoying their first chance to relax by eating take-out Thai food in her bed and watching chefs attempt to make the basket items of kumquats, cinnamon toast crunch cereal, wonton wrappers, and cream cheese into deserts.

She pulled away from his shoulder and pointed her chopsticks at him, “Hey, I’m invested here.”

Shaking his head in amusement, he set aside his empty carton and chopsticks and slung an arm around her shoulder while they finished their episode, watching the guy who attempted five-minute ice cream get chopped.

When she flipped the tv and the lamp on her bedside table off, leaving the room bathed in just the lights of the moon and the city at night streaming through her open window, she moved into his lap and smoothed her hands over his chest. Her nails were painted a bright pink and, even in the relative darkness, the color popped off of his gray t-shirt.

“I didn’t think this week was ever going to end. It’s weird because, even though we were together the whole time, I feel like I didn’t spend any time with you.” She tilted her head, “Does that even make sense?”

“Yeah,” he answered, catching one of her hands and tangling his fingers with hers. “You were busy— busier than usual. We weren’t home alone much, so I mostly had to be just your bodyguard.” He lifted their intertwined hands up to kiss her knuckles. “And you yelled at me to leave you alone while you were studying for your exams.”

“I did not yell,” she protested.

“Fine, you used your loud voice,” he amended teasingly.

“Because you were being distracting.”

Looking up at her innocently, he claimed, “I didn’t do anything.”

Homemade Dumplings

Feeling a little Asian inspiration the other day and started craving the dumplings my family use to make en mass, leaving our freezers stocked to the brim with these yummy little pockets of pork and cabbage.

Ingredients

·         1lb of ground pork

·         1 head of Napa cabbage

·         1 bunch of green onions

·         1 tsp of salt and pepper (for flavouring)

·         Splash of soy sauce and sesame oil

·         1 pack of wontons

·         1 tbsp of water

Directions

Shred the cabbage and green onions. Separate each layer with salt to pull excess moisture from the greens. Once they’re all shredded, wring out all extra moisture with a towel. Mix the cabbage and green onions with the ground pork, soy sauce, sesame oil, salt and pepper. Once combined, scoop a tsp of the mixture into the centre of a wonton wrapper. Using your finger, brush a little bit of water along the edges of the wrapper to bind it. Fold up the edges of the wrapper and twist. Repeat until all the mixture is gone.

Boil some water in a pot, and cook as many dumplings as you wish for about 7 minutes. Alternatively, you can fry them in a pan with sesame oil after boiling for about 3 minutes.

So… I had every intention of posting a chapter over the weekend, but finishing up finals and moving home from school kinda forced me to shove writing to the side. There will be a new chapter posted this coming Sunday though, and I have a little sneak peek of it for you now to tide you over ;)

He grinned at her admission, “Well you aced that exam, so all is forgiven, right?”

“I suppose I can put it behind us,” she replied faux-seriously, her eyes sparkling as she leaned in to give him a kiss.

Still dressed in his three-piece suit, he blends in with the crowd, some dressed like him, some dressed in casual street clothes. The mixture of both helps him to assimilate with the crowd, heading to a small stall underneath the overpass to grab some dinner. Approaching the stall, he stops when he sees someone that he knows shouldn’t be in this part of the city.

Clearing his throat, he sees his friend turn towards the sound of his voice. “Fancy meeting you here, Gladiolus.” Ignis sees Gladio is eating a large bowl of food, a fellow Glaive sitting next to him.

Wonton Cup Bite-Size Appetizers

Hi all! I’m so so sorry about the delay in posting once again. Things have been going on and I haven’t been able to find any time with blogging. Hopefully I’ll be a little more active during this summer, as I have plenty of time to rest.

These little bite-size appetizers are perfect for afternoon parties with a few people. They can be very dynamic based on what kind of ingredients you use. Here are 2 sample recipes for these with different ingredients.

INGREDIENTS:

  • wonton wrappers
  • 1: Smoke Salmon, whipping cream, salt & pepper, dill
  • 2: shrimp, raspberry, feta cheese, parsley

DIRECTIONS:

1. Place the wonton wrappers in cupcake tins (pans) and bake in the oven for 20 minutes until crisp.

2. Place the ingredients into the baked crisp wonton cups. Finish the wonton cups with by placing the herb on top as a finish.

(Try to make these or at least assemble them fresh. Any moisture can soften the wonton cups. )

For dinner, I made Pancit molo soup. This is so good. My husband couldn’t stop eating this.

For the broth, I simmered a huge chicken leg with a large onion and plenty of garlic. When the garlic were soft, I mashed them in.

For the dumplings, I mixed ground pork with chives, salt and pepper. Then I wrapped them up in store bought wonton wrappers.

After about an hour of simmering the chicken, I took it out and shredded the meat and discarded the bones and onion. Into the broth, I added the shredded chicken meat, dumplings and spring onions. Cook until the dumplings are done. Then season with salt and pepper.

Nom nom nom.
