Please share tips for harvesting and eating the young tips of Japanese Knotweed (Fallopia japonica). I’d love to hear what has worked for you. This plant is native to Japan, China, and Korea, and considered an intensely invasive weed here. It is valued for its nectar for bees, as an important food plant for Lepidoptera (includes Monarchs, Luna Moths, and Hummingbird Hawk-Moths) larvae, and apparently as tasty eating for us humans too. UPDATE: I remembered to look in our copy of the Wild Vegan Cookbook by Wildman Steve Brill and found TWELVE recipes for Knotweed and this description (photo two), which reminded me that Rhubarb is a Polyganum too (see third photo, with Chris holding leaves of both). #eattheweeds #polygonaceae #Fallopiajaponica #japaneseknotweed #Lepidoptera (at South West Philadelphia)
