I got to go outside today!

I was good and hung out near my keeper the whole time. I even climbed on him on my own without being set up there (I can climb cotton shorts pretty fast!)

He says my little claws are sharp on bare skin.

“Yes! I won again!” bambam exclaimed as he threw his fists up.

“Keep quiet, bam. You’re too noisy,” jinyoung complained, trying his best to concentrate on the new movie he had gotten interested in.

“Can’t you watch your show somewhere else?” bambam rebutted.

“Can’t you play your game somewhere else?” jinyoung replied with sarcasm.

“Can you two grown-ups stop shooting arrows at each other?” you said, coming out of the kitchen with chicken and soda.

“I’m hungry!” jackson shouted as he came running out of his room, ready to gobble down the whole bucket of chicken.

“Who is that for?” yugyeom asked as he saw a few pieces of chicken placed aside on the table.

“Mark. He’s on the way back,” you said nonchalantly as you ate your food. Mark had texted you earlier telling you he was on his way back and to save some chicken for him. You and mark have been good friends for a long time and he was the one who introduced the boys to you. Initially, they thought the both of you were dating. Despite clarifying, they still had their doubts, but they didn’t mention it as often as before. So when they saw you saving food for mark, they eyed and gave one another funny looks while you weren’t looking.

Halfway through eating, mark came back and he was all smiles when he saw the chicken you kept. “Knew I could count on you,” he said and gave you a fist bump. The boys were giggling and eyeing one another again. After eating, mark went about to shower and the rest of you hung out in the living room and was playing the usual games. The game was getting intense when you received a text from mark.

“I forgot to bring in my towel can you help? thanks”

“I’ll be right back,” you said and got up from the floor before heading to the balcony to get mark’s towel. The boys watched as you hung the towel over your shoulder and walked to the bathroom.

“Are you guys seeing what I’m seeing?” jaebum asked.

“I sure as hell isn’t blind,” bambam said and earned a hit on the shoulder from jaebum.

“Are you sure they aren’t dating? It seems otherwise to me,” jackson added.

“She even knows which towel is mark’s,” jinyoung raised his brows.

“And why of all people, did mark ask her to get his towel?” yugyeom frowned in confusion.

“Isn’t he naked?” youngjae blurted out and everyone stared at him with different looks on their faces.

You came out and noticed the boys looking at you weirdly. “What?”

“Tell us the truth,” jackson gave you a serious look and deepened his voice.

“Are you dating mark?” jinyoung asked as he leaned in with a serious stare.

“How many times do I have to say-”

“That you’re not dating him?” jaebum completed your sentence for you.

“Exactly,” you straightened up and returned a serious look.

“But why did he ask you for the towel? Can’t he text us? I mean, isn’t it more convenient that we’re guys?” bambam asked.

“I don’t know? Maybe because you guys can’t be trusted?” you shrugged. “Can we resume the game?” you asked and started the game.

The boys weren’t taking your word for it but they resumed the game anyway. Mark walked out of the bathroom and they started faking coughs and making weird noises. “Someone’s boyfriend is out,” jackson murmured but all of you except for mark heard it. “Shut up, jackson wang” you hissed and threw a pillow at him.

“Wow, why so violent?” mark asked as he walked over to sit.

“Where do you want to sit, mark?” yugyeom asked sheepishly.

“Anywhere?”

“Okay go sit beside y/n,” jinyoung said and signalled everyone to move, giving mark space. You rolled your eyes at their childish behaviour.

“Mark,” jaebum called out, “do you have anything to tell us?”

“What?”

“That you’re dating someone?” jackson squealed.

“Who?” mark widened his eyes.

The boys smiled and moved their gaze towards you, in which mark caught on. “How many times do I have to say-”

“Oh my god they’re saying the same thing!” youngjae exclaimed and clasped his hands together.

“What’s going on?” mark turned to you and asked.

“They think we’re dating because I gave you the towel,” you let out a laugh.

“You could’ve asked us instead,” bambam said.

“You guys can’t be trusted,”

“I swear I’m going to combust. Y/n literally said the same thing as you did!” jackson shouted and started hitting bambam who was beside him.

“That’s because you guys really can’t be trusted. I asked for help before but all I got was pranks, pranks, and more pranks,” mark rolled his eyes. “Now can we play the game?” Everyone started bursting out in laughters and couldn’t believe mark said the same thing as you did again. “Just shut up, mark” you glared at him and the poor boy was left in confusion.

They were never going to let the both of you live it down.

Making sweet and sour chicken and vegetables. I used a lot of extra veggies to bulk this out as I only use organic free range chicken and it’s very expensive; I prefer to just add more of the cheaper ingredients to make it go further.

Here I used two chicken breasts (chopped), didn’t add any Diet Coke or baby sweetcorn but added in addition to the above recipe:

-small tin sliced water chestnuts
-small tin sliced bamboo shoots
-tin of tomatoes
-I added three whole peppers instead of 1.5

This made seven good-sized portions out of those two chicken breasts 👍

BakingWithBooks Does Whole30 - “Tandoori” Roast Chicken with Coconut Curry Sauce and Cucumber Tomato Salad

This is a Whole30 compliant version of Tandoori chicken. It is by no means authentic because there is no yogurt, and I don’t have a tandoori oven, but trust me when I say that the flavor is incredible. 

Ingredients for the Chicken 

1 whole chicken - about 5-6 lbs 

2 tsp chili powder 

2 tsp paprika 

2 tsp turmeric 

Equal parts: ground ginger, garam masala, granulated onion and garlic

1-2 tbsp tomato paste 

Juice from a lime 

1 lime, quartered, 2 whole cloves garlic, and ½ onion for stuffing inside 

Extra virgin olive oil and more kosher salt and pepper 

Kitchen twine for tying the legs

Ingredients for the Coconut Curry Sauce 

½ of a 13.5 fl oz. can of coconut milk 

1 ½ tbsp red curry paste 

2 sprigs of mint, finely chopped 

Juice from ¼ lime and ¼ lemon

½ tsp kosher salt 

2 pitted dates 

Directions for Chicken 

Clean the chicken, removing any giblets and kidneys from the inside and thoroughly pat dry with paper towels. 

In one bowl, mix the chili powder, paprika, turmeric together. Add just enough lime juice so that mixture becomes a paste. 

Make gashes (not deep) in the chicken skin and slather the paste all over the bird. Each part of the bird should be covered. If you need more paste, feel free to make more. 

Marinate in the fridge for about 2 hours. 

Make another paste (without lime juice) with the garam masala, ginger, granulated garlic and onion with the tomato paste. This is going to give the chicken incredible flavor along with the intense red color that Tandoori chicken is known for. 

Slather this paste all over the front of the chicken and return to marinate for another hour. 

Remove the chicken from the fridge and let it come to room temperature for about 30-40 minutes, and preheat your oven to 420 degrees Fahrenheit. 

Season the inside of the chicken very generously with kosher salt and pepper. Stuff it with the lime, onion, and garlic, and tie the legs with kitchen twine. 

About 5-10 minutes before your bird is ready to go into the oven, heat extra virgin olive oil in a cast iron skillet over high heat. You want it to sizzle when a dash of water is added. 

Once the oil is heated, add the bird, breast-side up into the skillet and let sear for about 4-5 minutes. 

Place into the oven to roast. Take it out when the breast meat reads 155 degrees Fahrenheit and the thigh meat reads about 165 degrees Fahrenheit. 

Let the chicken rest before carving for about 20-25 minutes. Make the sauce while you’re doing this. 

Directions for Coconut Curry Sauce 

Combine all ingredients into a blender and puree until smooth. 

Strain through a fine sieve to remove any lumps. Taste for seasoning and adjust to your likeness. The sauce is meant to be rich, slightly spicy, and very faintly sweet. 

Garnish with cilantro. 

The cucumber and tomato salad is lightly dressed with sea salt, pepper, red vinegar, and light olive oil.

Carve your chicken and serve.

Making Mediterranean stuffed chicken:

-Lay out your flattened chicken breasts (or turkey) on an oiled baking sheet, giving them a slight overlap, and spread with sundried tomato pesto mixed with crushed garlic and a little finely diced red chilli.
-Prepare your stuffing ingredients. I used spinach, diced mushrooms and diced red peppers then added some seasoning.
-Carefully roll up your chicken and sprinkle the top of the roll with oregano.
-Bake in a preheated oven at 200 Celcius for about 30 mins, or until the chicken is cooked through and the veggies are tender.
-Slice the roll carefully and serve the pieces arranged so you can see the pretty vegetables in the middle.

Balsamic and lemon roasted chicken and vegetables.

Simply take a large oven tray and drizzle with olive or coconut oil before chopping a selection of veggies (Iused bell peppers, carrots, mushrooms, red onions and cherry plum tomatoes) and throwing them into the tray.

Next, add your chicken (I used organic, skinless thigh fillets) and mix everything together with your hands so it’s coated in the oil. Wash your hands thoroughly.

Drizzle over some balsamic vinegar and squeeze in some lemon juice, then sprinkle over some dried oregano and a few dried chilli flakes.

Put into the oven at 190 Celsius for about 30 mins, or when the chicken is cooked through and the vegetables are becoming crisps and a tiny bit charred around the edges in places. I stir once during this time, to make sure everything cooks evenly.

The tomatoes ‘melt’ into a lovely sauce with the balsamic vinegar, lemon juice and the oil and this also keeps the chicken nice and moist.

You can also add chopped new potatoes in with the chicken and veggies to make a complete meal in a tray-bake! I preferred to leave them out here, because I wanted to serve some portions with rice and others with noodles or potato wedges.

Crispy, Juicy Chicken Thighs – Meal Prep 

A quick recipe for your meal prep needs 

Ingredients 

Boneless, skinless chicken thighs 

Seasoning blend – 1 tsp of each: kosher salt, black pepper, lemon granules, dried oregano, granulated onion, granulated garlic, smoked paprika, and ancho chili powder 

Freshly minced parsley or cilantro 

Olive oil

Lemon juice  

Directions 

Using the seasoning blend, fresh herbs, and lemon juice, and olive oil, create a marinade for the chicken thighs and let marinate for about 2 hours in the fridge, removing 30 minutes prior to grilling. 

Preheat your oven to 375 degrees Fahrenheit and heat a cast iron pan over medium high heat. 

Sear the chicken thighs on each side to develop a crispy skin and finish in the oven until the internal temperature reaches 165 degrees Fahrenheit. 

Slice and portion for meal prep.
