Plant-based dinners don’t always need to be fancy and all good-looking. The aim is to give your body the nutrients it needs. My dinner was focused on upping my protein intake so I had quinoa, broccoli, red kidney beans (all high in protein) with roasted veggies and black and white sesame seeds and nutritional yeast.
Slice zucchini, place on a plate with soy sauce, coat both sides, heat pan with tiny bit of peanut oil (or whatever oil), plop zucchini in the pan, wait & flip, season with salt and pepper, plate & top with toasted black and white sesame seeds!
Super easy, super delicious, super making this again tomorrow night (but adding some protein)

The most beautiful breakfast: Strawberry/Raspberry Banana Smoothie bowl with Mango, Dragonfruit and Passionfruit topped with Red Quinoa and White Sesame Seeds, and a glass of fresh Coconut Juice. I was looking for a little detox breakfast after a long weekend of eating and eating and eating in Hua Hin and so I went with a smoothie bowl breakfast but the colours turned out so beautifully that even I was surprised.
