Vegan Sweet Potato Hash


  • 2 medium sweet potatoes
  • 2 tbsp olive oil
  • 1 tbsp vegan butter
  • ½ tbsp rosemary
  • 1 tsp thyme
  • salt and pepper to taste
  • ½ tsp red chili flakes
  • 3 garlic cloves


  1. Preheat oven to 200°C. Dice the sweet potatoes into small cubes and place in a bowl. Add olive oil, salt, pepper and mix well. Place on a backing sheet lined with parchment paper, crush garlic and lay them in between the potatoes and bake for 15 minutes. 
  2. Take the potatoes out of the oven and meld butter in a frying pan. Add herbs and cook on low with the butter until they become fragrant. Add the roasted garlic and the potatoes to the pan and fry for 5 minutes on medium heat.
  3. Serve on it’s own or with some Avocado. Enjoy!

Who else loves pancakes drowned in warm peanut butter 🙉? Recipe for these 🥞 to make for a fancy brunch :
Ingredients :
1 cup flour
1 & ¼ cup plant-based milk
2 Tablespoons lemon juice
2 tablespoon maple syrup or 2/3 cup sugar
1 teaspoon vanilla extract and/or cinnamon(optional)  ¼ teaspoon baking soda
2 teaspoons baking powder (optional but makes fluffier)


In a bowl, combine the milk with lemon juice and set aside. In a large bowl mix the flour, sugar, baking powder and baking soda.

Now add in the soy milk mixture and vanilla extra. Stir until incorporated.

Heat a large nonstick pan over medium heat and pour batter into the pan.

Cook until the edges dry out slightly and little bubbles start forming on the surface (2-3 minutes)Flip and cook for an additional minute or two (until this side is lightly brown.) Serve still warm and go crazy with toppings ! I like frozen berries, maple syrup, chocolate chips, banana slices, poppyseeds, peanut butter…


LotR 30 day year challenge | Spiffiest Dresser

So I have made a giant vat of porridge to have this week. This is my favourite flavour which is oatmeal raisin cookie. I did enough for about 7 days or for a family of 4 for 3 days

6 cups plant milk ( it doesn’t really matter but I used almond milk
2 cups oats
1- 1 ½ raisins
3 tea spoons cinnamon
¼ ground ginger
1/8 tea spoon all slice
2-4 tea spoons vanilla extract
2-4 tablespoons stevia
1-4 tablespoons maple syrup

Stick it all the ingredients apart from the stevia and syrup pot at the same time and bring to the boil the simmer on low until it’s your preferred consistency ( I like it slightly looser but I think that’s more a uk thing. If you rather a thicker consistency just reduce the liquid slightly and cook a little longer.

Stir it every so often and tip into a container

I couldn’t come up with what they’re talking about, but it ain’t good. Probably something about crushing dissenters and what to have for brunch. 

I started this drawing and halfway through started questioning it. Nightmare Moon is still evil, power-hungry and arrogant and would have to fight constantly to secure her reign after deposing Celestia. She is a tyrant in every way. I have a hard time thinking Twilight would forgive NMM, much less join her. I’ve read a few fics like that, but it usually had a heavy dose of “Celestia was really a tyrant all along!” and I’ve never been a fan of that idea. The one exception was pretty damn dark and basically Twilight had a serious case of Stockholm Syndrome. So yeah, in the Starlight-altered timeline, Twilight would either just break and be a recluse, be imprisoned, or be leading the resistance. Maybe… Maybe if Twi tried to get close to NMM to sabotage her, free Celestia, etc…

However, I could totally see the above image happening if NMM had won that initial fight against Celestia 1000 years ago. I don’t think it would exactly be a loving relationship of equals though. 

Chickpea flour pancakes 🥞

- 1 chia egg (1 T chia seeds + 2 T warm water, let sit for 5 mins)
- ½ cup chickpea flour
- ½ cup plant milk
- 1 t baking powder
- Sweetener if you want it

- Mix all ingredients
- Scoop out spoonfuls onto a hot greased pan (I used 1 T coconut oil)
- Wait for bubbles to form, flip
- They’re ready when they’re golden
- Eat them!!
