Even though Sportacus eats fruits and vegetables, his eating habits are almost as bad as Robbie’s.
Like come on three bites of watermelon for breakfast? Single bites of apple several times a day? Half of a piece of bread with carrot sticks on it for supper?
You can’t tell me that’s not depression eating too.
A friend made too much cheese samosa filling so we did some creative problem solving and threw somewatermelon in the bowl with it. The results were delightful, so I’m sharing it with you now! It’s a nice sweet-and-salty snack/refreshing summery side dish.
Mozzarella cheese (shredded)
Fresh mint leaves
The exact amounts don’t matter much. We didn’t measure anything and it turned out just fine. Just throw stuff in a bowl until you get a proportion that tastes good to you, basically!
Dump feta and shredded mozzarella in a big bowl.
Chop mint leaves and stir them into the cheese mixture.
Chop/scoop your watermelon into bite-sized pieces and stir it together with the cheese/mint. (You can buy pre-chopped watermelon if you want to save time/energy, but it can be a bit expensive. I personally like the “lazily scoop out chunks of melon with a spoon” method– easier than chopping but cheaper than pre-chopped melon.)
