FFXV: Veggie Medley Stew

@poeticboy16 asked me to make this and I have to say I am so glad he did because this was soooo good! Yes the ingredients may appear a bit involved as far as finding them goes but as long as you have an Asian grocery store of some kind near you, you should be able to get some of the less common ingredients (fresh oyster mushrooms, enokitake, and pea sprouts, at the very least). I also decided to make this recipe completely vegan by including coconut milk, but you can also use the same amount of goat’s milk to use as the “sheep’s” milk.

Let’s go!


  • 4 cups Vegetable Broth
  • 1 can (12 - 14 oz.) Coconut Milk
  • 1 White Onion
  • 3 cloves Garlic, minced
  • 2 tbsp. Olive Oil
  • 2 medium - large Sweet Potatoes
  • 3 bunches Baby Bok Choy or 1 large bunch Bok Choy
  • 12 oz. Oyster Mushrooms
  • 1 large bunch Enoki/Enokitake Mushrooms (depending on your market, may also be labeled as soup mushrooms or seafood mushrooms)
  • 1 - 2 handfuls Pea Sprouts
  • Salt and Pepper, to taste
  • Paprika and (optional) Cayenne, to taste (I used at least ½ tsp. each)

Prep Time: ~15 min.  |  Total Cook Time: 30 - 40 min.

Makes: 6 - 8 servings


Step 1.) Prep your veggies: dice and mince the onion and garlic, respectively. Separate the bok choy between the whites and the greens (set the greens aside with the pea sprouts), making sure to cut into bite size pieces if necessary. Peel and cube the sweet potato (set aside with bok choy whites.) Rinse and cut away the root portion of the enokitake, and rinse and cut any tough stems on the oyster mushrooms.

Step 2.) Heat the olive oil in a soup pot and cook the garlic and onions until they begin to turn translucent. Add in the paprika and (optional) cayenne to coat the onions and garlic, and slowly whisk in the vegetable broth. Add in the sweet potato and bok choy whites and bring to a boil. Turn down to a simmer for 5 - 10 minutes (you don’t want your sweet potato to be too soft just yet!)

Step 3.) Add in the coconut milk and mushrooms and bring to a boil one more time before allowing to simmer for 5 minutes. Adjust the broth with salt and pepper (or paprika and cayenne), to taste. Add the pea sprouts and boy choy greens to wilt. 

Step 4.) Serve immediately. Enjoy!


This was so yummy and satisfying! I’m honestly so used to soups with a thicker broth, I wasn’t sure I would like the texture of this, but I was delighted to be proved wrong!

Prompto: With as much work as it takes for him to successfully court a paramour—much less keep them around in miraculous perpetuity—it goes without saying that Blondie can get a wee bit insecure when he feels his territory is being encroached upon, even when said challenger is a skinny, teenaged, wannabe daemon hunter with a better chance of bagging a berserked Red Giant than wooing someone else’s partner from under their nose. Prompto plays off the juvenile’s flirtations as harmless banter, but his jealousy is obvious; he bemoans to himself that ever since turning thirty, his freckles that were once so endearing now just look like the ugly liver spots of a geriatric. It’s only when his lover finds him alone nursing a root beer at Takka’s diner and wallowing in self-doubt that they reassure him of his rightful place by their side: “You have nothing to worry about,” they tell him with a wink. “There’s only one daemon hunter in Hammerhead I’d let shoot me through the heart.“

Gladio: The big man laughs when a teenage daemon hunter tries to make a move on his paramour; he laughs at their comically immature pick up lines—“Are you a Chocobo? Because you’re im-peck-able”—and their cringeworthy attempts at flattery—“Only the Astrals could have created a creature as divine as you”—and he continues laughing at their reckless efforts to impress his lover when they take on a Daemonwall singlehandedly only to be sent flying nearly all the way to Niflheim from Leide. His laughs falter slightly, however when the teenager’s broken and mangled figure is carried into Cid’s garage on a gurney; amusement at the expense of another’s (admittedly self-inflicted) misfortune is a bit insensitive even for the likes of him, and he watches with mild concern as his partner prepares a series of curatives for the unlucky mercenary. But when they lean over the youth’s body to administer an antidote, and Gladio spots the teen’s hand gradually reach around their backside to cop an unsolicited feel, the big man’s laughs abruptly cease. “Watch it,” he growls, as he hefts his broadsword, “or that Daemonwall is going to be the least of your worries in a minute.”

Ignis: Specs scarcely has a jealous bone in his body, but that doesn’t mean he won’t grow irritable at the persistent and moderately annoying presence of the teenage daemon hunter currently hanging on to his paramour’s every word. He’ll ask the youth to accompany him to Keycatrich Trench on his research assignment to the Tomb of the Wise in an effort to tear them away from his lover’s side for longer than five seconds; when they decline in favor of remaining within spitting distance of their dubious object of affection, he’ll take a different tact and offer to whip them up a helping of Veggie Medley Stew using questionably sourced sheep’s milk, hoping that an ill stomach may confine them to their bed for a time. But in a rare lapse of judgment, the strategist underestimates the shameless perseverance of an infatuated adolescent on a wanton mission; the teenager still lingers ardently, only now they smell like the inside of Longwythe Rest Area’s bathroom. Desperate times call for desperate measures, Ignis finally decides, and sends the youth on a wild Cockatrice chase to the other side of Lucis; when his partner inquires into the disappearance of the lovesick daemon hunter, Ignis plays demur. “I told them your favorite gemstone lies at the bottom of Pitioss Ruins,” he quips. “Turns out, Pitioss Ruins doesn’t exactly have a bottom.”

Low-budget, no-waste shopping list

This is my fallback for when I know I’m going to need to cook at least 3 nights a week and won’t be able to order in or drive thru for meals.  

Cooking Supplies

  • Pam nonstick spray or extra butter/olive oil
  • Aluminum foil
  • Parchment paper

Meal Ingredients

  • 2 boxes of linguini and/or spaghetti noodles
  • 1 box rotini pasta
  • 3 jars pasta sauce
  • 1 large bag shredded mozzarella
  • 1 large bag shredded or grated parmesan
  • 1 bulb garlic
  • 1 onion
  • 2 bags frozen veggie medley in steamer bags
  • 1 gallon of milk
  • 1 gallon of vanilla almond milk
  • 6 skinless chicken breasts
  • 2 lbs ground beef
  • 2 lbs ground spicy Italian sausage/breakfast sausage
  • 1 package hot italian sausage links
  • 2 or 3 baking potatoes
  • 1 package bacon
  • 12 eggs
  • unsalted butter
  • olive oil
  • garlic powder

Snacks, Sides, and Quick Meals

  • 1 bag frozen french fries
  • 1 loaf french bread
  • 1 loaf sandwich bread
  • 1 package English muffins

  • Broiled chicken seasoned with olive oil, garlic, salt and pepper, served over pasta and alfredo sauce with steamer veggies on the side

  • Half-arsed lasagna (I submitted this one recently, not sure if it’s up yet - if mods approved, please link?) with garlic bread
    4-5 spoons, 6-8 meals
  • Spaghetti with garlic bread (add in ¼ lb of ground beef browned and mixed in sauce for extra iron/protein)
    1-2 spoons, 2-4 meals
  • Bacon, egg, and cheese sandwiches on English muffins
    2-3 spoons, 1 meal each
  • Breakfast patty sandwiches (sausage patty made from ground sausage and a slice of cheese) on English muffins
    2-3 spoons to prepare, 1 spoon to reheat, 1 meal each
  • Lunch meat and cheese slice sandwiches
    1 spoon, 1 meal each
  • Peanut butter and jelly sandwiches
    1 spoon, 1 meal each
  • Grilled sausages with onion and potato, baked potato and garlic bread on the side

I hope this helps.  :)  This feeds me and my boyfriend 2-3 meals a day (he sometimes eats lunch at work) plus snacks for about 1.5-2 weeks, normally.  We often have a friend over on the weekends who eats with us, so take this with a grain of salt.  You could probably make it stretch for 2 people and 1 child.

yummy veggie medley

This side dish has become one of my favorites; it is healthy, tasty, and only costs a couple dollars to make. It is a tasty way to get more veggies if you don’t know many ways to cook them. You can adjust the specific vegetables, add different spices, or anything else to make it suit your tastes.


  • one small/medium zuchini
  • one small/medium yellow bottleneck squash  
  • sweet potato (should be about the same weight as your squashes combined)
  • one or two tablespoons margarine
  • salt/pepper/seasonings


  • knife and cutting board
  • aluminum foil
  • small baking sheet


  1. Wash your veggies/cut out any bad spots.
  2. Cut your veggies into bite-size pieces. For the squash, start by cutting off the stems. Then I cut them in half length-wise and then slice them into half moon shapes.
  3. Sweet potato is harder because you have to cut all the skin off first; I don’t know if a potato peeler would work. Get the skin off and then cut it into small cubes.
  4. Get a large piece of aluminum foil. I usually do big enough to cover the baking sheet. Put your veggies in the middle; add your butter and seasonings. Then fold the foil together to make a packet. Try to close it pretty well so the veggies don’t dry out.
  5. Bake the veggies in the oven at 350/400 degrees. I cook them for anywhere between 20 minutes and an hour; they get softer and tastier the longer they cook.

I really enjoy this dish as a side or even by itself; I like the sweet potato because it adds bulk and sweetness to the meal, but the squash is tasty on its own or you can mix in sliced onions or other veggies if you like. Spices like garlic or chili powder also make a good addition. This recipe will usually serve 3-4 people if I am using medium sized squash, but you can adjust the amounts depending on how much you want.

Carol stopped slicing the cucumbers at the familiar voice and smiled as she turned around. “Came to try a taste? I’m making a sort of veggie medley tonight.” She gestured to the various piles of vegetables on the cutting board.

“Don’t need to. Everything you make tastes good.” Daryl shrugged in the doorway. He had an uneasy air about him as crossed the floor of the prison kitchen, glancing around at the walls and cabinets. His hands fidgeted from grazing the counter, to grabbing his back pocket, onto the wall, and then up to his mouth where he chewed on his thumbnail. Carol raised an eyebrow at his spastic behavior, at least for Daryl. If he was trying to deliver bad news, he had never done it this way before. He would be hesitant, but he had never so anxious.

“Daryl?” She crossed her arms and asked lightly. “What is it? Is everyone okay?”

Her query caught him off guard. “Mm, yeah. Everything’s fine. We got more people along the fence to keep up with the walkers. Michonne should be back by tonight, too.” He said offhandedly. His mind was absorbed with whatever it was he really wanted to say. His hand kept retreating to his back pocket, too.

Her whole body relaxed and she uncrossed her arms once she heard everyone was fine. “That’s great.” She said sincerely as she went back to the cutting board and popped a cherry tomato in her mouth. “Now why don’t you tell me what’s on your mind before you pace a hole in the floor.”

Daryl’s feet went still, but his thumbnail was back in his mouth. She wanted to let out a smile, but she knew if she kept grinning at his behavior, he would go on the defensive from being embarrassed and might not tell her at all.

He finally sauntered up next to her and removed at item from his back pocket. When he placed it on the counter, she saw rolled up newspaper and a shoelace string in the mix. Her breath stilled when she realized what it was.

“A present? What’s the occasion?”

“I remember you sayin’ you had an October birthday. I haven’t kept track of the months for a while, but the leaves started changin’, so I figured it had to be soon.”

Carol’s grin could’ve split her face in half. “Daryl…”

“You gonna open it or let someone else have it?” He asked impatiently. She chuckled and gently grabbed the parcel off the counter. It was heavy and felt cold, even through the paper. She wanted this moment to last as long as possible. Her birthday hadn’t been celebrated since the apocalypse made its way into town, and even so for years before that when she was still married to Ed. And to have the present be from Daryl made it all the sweeter.

“Come on now.” He gently pushed. This moment was already lasting forever to him—her waiting wasn’t helping the anxiousness.

Her fingers undid the shoelace knot, and she peeled the paper off what had to be the most beautiful knife she had ever seen. Once she pulled the weapon from its holster, she reveled in its radiance. The long silver blade glinted in the light and the brass knuckles attached at the bottom made her feel more invincible just holding them in her hand. Once her fingers slipped into the holes and she made a fist, she felt like Cinderella slipping on her glass slipper.

It was absolutely perfect.

She slid the knife back into the holster and clipped it onto her belt. The right words were unable to come to her to describe how utterly flawless his gift was. He actually broke the silence before she could.

“Found it on our run last week. Someone had a big ol’ collection under their bed, and-“Suddenly her arms were around his neck and she was pressed up against him. Her cheek was nuzzled into his neck and he was quickly becoming warm while his heart seemed to be going thrice its normal speed. He completely forgot what he had been saying.

She pulled back, her hands now resting on his wide shoulders, and placed a quick peck on his cheek. He was looking down but his mouth was tilting up.

The weight of his gift hung on her belt. Every time she felt the end of the holster bounce against her leg, a wave of pure joy surged through her. It was like a safety blanket, a piece of him always with her. 

“I love it. Thank you so much.” Her eyes were locked with his, and she was surprised at how long he held her gaze.

“Yeah, well, here’s to hopin’ you never have to use it.”
