According to one ten-year vegan, this is the best vegan cheesy sauce ever! This recipe is like a cross between spinach artichoke dip and mac ‘n cheese… and it’s super easy!

- 1 cup plain unsweetened soy milk
- 1 ¼ cup canola oil
- 1 Tbsp balsamic vinegar
- ½ cup vegetable broth
- ¼ cup nutritional yeast flakes
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp cayenne pepper
- 2 garlic cloves
- 1 Tbsp olive oil
- 1 cup frozen spinach
- ½ cup marinated artichoke hearts, chopped
- 10 oz macaroni pasta (or shells)
