Banana loaf 🍌💛

• 2 cups GF flour
• ½ teaspoon baking powder
• ½ teaspoon “no-salt” (low sodium salt) - you can use normal salt if necessary
• ½ cup coconut sugar
• ¼ cup coconut oil
• 3 bananas
• 1 teaspoon vanilla
• ½ cup non- dairy milk (I used rice milk)
• 1 teaspoon vinegar
• chopped vegan chocolate (I used dark-orange)
• ½ cup goji berries (or dried cranberries)

Add the dry ingredients gradually to the wet, and lastly add the bananas and chocolate. Put in preheated oven for 45 minutes. And voilá.

Vegan Cashew Chocolate Truffles

This is hands down one of my easiest and most enjoyed recipes. It is so simple you’ll be so angry you didn’t know it before. The ingredients are few and the prep is minimal, but it is a bit time consuming in that you need to chill them in the fridge for a few hours before assembling, and then the assembling can be a bit time consuming. However, trust, they are worth it!


  • ¾ c. unsalted cashews
  • ¾ c. cold water
  • 1 lb dark chocolate (ensure you select vegan.)
  • ¼ c. coconut almond fresh


You can actually use whatever you like, here for this batch I crushed cashews, dark chocolate and coconut flakes. I’ve also used cocoa, chopped cranberries, and icing. You get the point. 


  1. Add chocolate to a double broiler with the almond milk and cook on medium/high (or if you are ghetto, simply put one smaller saucepan on top of a larger one and add an inch of water in the bottom pot).
  2. Ensure you are stirring regularly, as it will cook to the bottom of the pot if not. This can take upwards 5-7 minutes, depending on the chocolate and method. 
  3. While waiting for the chocolate to milk, add the cashews and the cold water into a blender and blend on high for 2 minutes (yeah, I know, it’s a long time). It should be a nice creamy texture.
  4. When chocolate is melted add the creamed cashew and stir until mixed well. 
  5. Put into a large bowl, cover and refrigerate for at least 2 hrs. ( I do not suggest leaving it overnight as it will make the process of rolling your truffles quite hard.)
  6. Then you simply take out about 2 tbsp. of the cold mixture, roll in your hand until a smooth ball and coat with topping. (To toss the truffles, I find it easiest to prepare little baggies with each of the toppings I chose.)
  7. Put them on a plate and serve, or if saving them, ensure you don’t stack them on top of each other without wax paper or something separating them. Ensure they are kept in the fridge for best texture!

Vegan Birthday Cake Pancakes

Well, ever feel like waking up and filling your body with the most unhealthy but entirely delicious food (general suggested use: special occasions, birthdays, etc.)

*WARNING* Not at all healthy and filled with sugar, but incredibly delicious


Pancake Ingredients

1 c. pancake mix

1 c. vegan yellow cake mix

3 tsp. Ener-G Egg replacer + 4 tbsp. cold water

1 tsp. vanilla

1 c. coconut almond milk

¼ c. sprinkles

Glaze Ingredients

2 tbsp. earth balance, melted

2 tsp. vanilla

1 tbsp. maple syrup

3 tbsp. coconut almond milk

1 c. brown sugar

Strawberry topping

2 c. sliced strawberries

1 tbsp. lemon juice

2. tbsp sugar


Prepare your strawberries by mixing the ingredients and set aside, so that they soak up the lemon and sugar.

Prepare the glaze ingredients by mixing them together very well and set aside. (remix vigourously before use)

Prepare pancake mixture and make pancakes by pouring ¾ c. of mixture on a frying pan until lightly golden. (keep them warm in the oven at 200 to serve all at once.) 

Stack pancakes, add glaze and strawberries and prepare to get sugar high!

Will make about 8-10 pancakes. Bon appetit!
