Wishing everyone a blessed and magical Mabon! 🍎🍂✨
Things went very well with my roommates and I prepared a vegan sabbat themed feast for all of us :’)

I made caramel apples, vegan pumpkin pie, sunflower seed rolls, roasted pumpkin seeds, a blend of sunflower seeds, pumpkin seeds, and dried cranberries, pomegranate seeds w fresh mint, pumpernickel bread with plant butter, & apple cinnamon tea 💛

If you’re like me and love pumpkin flavored things, you have to try this. Pumpkin pie “nice cream”. So good. Tastes just like pumpkin pie.

Here’s the recipe:

3 bananas, frozen
½ cup of 100% pure pumpkin purée, also frozen
1 tbs nutmeg
1.5 tbs ground cinnamon
2 packets of stevia in the raw (optional)
Crushed walnuts (also optional)

I recommend freezing the bananas for at least 2.5 hours to make sure that the nice cream turns out closer to the consistency of actual ice cream.

I’m thinking about using this as a filling for a frozen vegan pumpkin pie. I’m gonna test it and get back to all of you.

I just discovered the wonder of (homemade!) seitan and is love to see a seitan roundup! I've also gotten into making pies, a pie roundup would be awesome :) And don't apologize for "slacking," you run a great blog!!

Over the past couple days I posted this vegan seitan entree round up, vegan seitan soup round up and vegan seitan sandwich round up. Here are other seitan recipes that I’ve posted in the past:

As for pie, here’s a vegan pie round up and a vegan apple pie round up. Here are other pie recipes I’ve posted in the past (along with some pie-but-not-actually-pie recipes):

I hope you’re able to find some recipes you’d like to try out and thank you for the kind words!
