Vegan Loaded Burritos

Ingredients:

  • ¼ cup rice
  • 1 cup water

  • pinch of salt

  • 175 grams vegan taco meat

  • ½ cup corn

  • 1 can black or kidney beans drained

  • ½ cup vegan cheddar cheese

  • ½ Tbsp. Chili Powder

  • ¼ tsp. Garlic Powder

  • ¼ tsp. Onion Powder

  • ½ tsp. Paprika

  • 1 ½ tsp. Ground Cumin

  • ½ avocado

  • Wraps

  • juice of half a lime

  • handful chopped cilantro

Directions:

  1. Cook rice with the water lightly salted with a pinch of salt in a small pot. Once the rice has finished cooking add the lime juice and the chopped cilantro and set aside.
  2. Drain the beans and rinse, then set aside. In a large pan add 1 tbsp of oil and cook the vegan taco meat until it’s browned. Then add the beans and the corn. Cook for about 2 minutes on medium high. Then add the seasonings with ½ cup water. Let it cook on low with a lid on.
  3. Slice the avocado and prepare your wraps. Start of with some mushed up avocado slices, taco meat and bean mixture, add the rice, the cheddar cheese and roll into a burrito.
  4. Heat a pan with some vegan butter and once it’s melted place your burrito in the pan and let it brown on both sides to seal it.
  5. Cut in half and enjoy!

I’m not sure why the concept of vegans only wanting to date other vegans if they can help it is shocking to non-vegans. It’s almost like people have always had preferences for finding other people who share the same core beliefs of morality (and treatment of others) as they do. It’s really not a new concept. Just as I can’t seriously dating someone who treats other humans disrespectfully I can’t seriously date someone who treats other animals disrespectfully.

mmm veggie sushi! 😍 So yummy and easy to make at home. It just takes a bit of practice. You don’t need anything fancy to make them, just white rice, nori sheets, and some of your favourite veggies. Here’s my super simple sushi how-to: https://youtu.be/JKy4o_OBv5g. I hope it helps you make veggie sushi at home because it’s way cheaper and tastier to make it yourself. Enjoy! 😋

Very important sandwiches 👌🏼🌱 this is one of my favorite sammies ever and it’s really easy–5 ingredients if you don’t include lemon juice, salt, pepper, and hot sauce!

It Started With A Waffle: Eggnog French Toast

“I used to be weirded out by eggnog when I was little. ‘What were eggs doing in milk?’ I thought to myself. I had never tried non-vegan eggnog, but I’m glad to say that I really enjoy the vegan versions nowadays.

I was shopping at the grocery store the other day and planned on to make French toast when I got home. Then… I unpacked the vegan nog, and the whole plot changed. Eggnog French Toast for the win! Since this recipe is vegan, I used applesauce and flaxseed meal in place of eggs.”
