Oil-free chips and chili 😍😍 Best lunch ever! I bake the chips on parchment paper for ~50 minutes, shuffling them around halfway through. 👌 So good!

Today’s chili: carrots, peppers, mushrooms, chickpeas, kidney beans, tomato paste, oregano, black pepper.

We don’t have any chili powder. 😬 I might try a non-spicy one if I can find it but in general chili anything hurts my stomach. 😔 I used to be able to eat spicy food! I’m not sure why my stomach doesn’t like it anymore.

I guess I’ll survive. 😉 I have plenty of other tasty things to eat! Speaking of which, I just uploaded my how-to recipe video for that sweet potato crust pizza! 🍕 We made it twice so far. It’s so good!

Oil-free chips are so good. 😍🍟 This was my lunch today. I could go for a second plate right now!

I baked the potatoes on parchment for 50 minutes at 220 degrees Celsius. Before baking I seasoned them with oregano. Just flip them them halfway through baking and you’re good to go!

Kuba tried microwaving the broccoli to steam it and it worked! 🤗 He nuked the florets for 5-6 minutes with a wet paper towel draped over them. So easy!

And of course we had a side of sautéed veggies in tomato sauce and some sauerkraut because we are obsessed with that lately.

Today we were talking about how potatoes seem to be a universally-loved food. I could eat them every day. 😬 How do you feel about potatoes? 😅

Gluten Free | Dairy Free | Sugar Free | Nut Free | Lactose Free | Sulphate Free Fructose Friendly | Vegan Friendly 

Ingredients: (serves 2)
2 regular potatoes
2 sweet potatoes
2 tbsp of coconut oil
1 tsp rosemary
1 tsp himalayan salt 

1. Wash potatoes and halve lengthways
2. Pre-head oven to 200 degrees celcius
3. Using a large pot, boil potatoes on the stove until almost done
4. Peel (optional) and cut potatoes into long rectangles approx 2cm in width
5. Line a baking tray with baking paper and lay potato pieces lined up evenly
6. Using a brush, apply coconut oil to lightly cover potatoes 
7. Bake until golden and slightly brown, remove from heat and set on a cooling tray to crisped up
8. Sprinkle with rosemary and salt, serve! 

Chips for lunch 🍟🍟 yes please! Potatoes are healthy and nutritious as long as you skip the oil. 👌 We used parchment paper to bake these. A reusable silicone baking mat would work too. I’m so glad we finally have an oven!

To make your own oil-free chips: Preheat your oven to 220 degrees Celsius (or the highest recommended temperature for your parchment paper). Wash and cut potatoes into wedges. You don’t have to peel them but Kuba prefers them peeled. 🙂 Toss them with your favourite seasonings and spread onto the parchment in a single layer. I used oregano, basil, rosemary and black pepper. Cumin, chili powder or nutritional yeast would be nice too!

Bake until golden and crisp. Flip them after 30 minutes or so. These were in the oven for an hour and still weren’t super crispy. We’ll try cutting them thinner next time.

I served our chips with sautéed carrots, beans, peppers, tomatoes and chickpeas seasoned with tomato paste, oregano and black pepper. So saucy. So delicious! 😜

Oil-free fries for lunch today. 😍🍟👅💦 I don’t know if I should call them chips or fries. I feel like I got used to calling them chips in the UK. 😂 Either way, they’re delicious!

We had them with an almost-chili concoction. 😅 I sautéed mushrooms, carrots, peppers with our usual tomato paste but today we added in a bunch of kidney beans. So it looked like chili but didn’t taste like it since I didn’t use chili powder, only oregano and black pepper. 😜 It still reminded me of chili fries!
