vegan nacho cheese

GFV Nachos

Blend in blender, then pour into pan on med-high heat: ½ roasted red pepper  ½ can roasted green chiles ½ c nutritional yeast 1 tsp. lemon juice  2 cloves garlic, crushed 2 Tbsp tahini 1 Tbsp white miso paste ¼ c. gluten free vegan all purpose flour ¼ tsp. salt ½ package silken tofu 1 c. vegan milk ¼ c water add to pan: ½ roasted red pepper, diced ½ can roasted green chiles ¼ c black beans ¼ c frozen corn ¼ c diced tomatoes or salsa 4 tbsp taco seasoning (cumin, paprika, onion and garlic powder, red peper, chile powder) Cook a few minutes, stirring constantly until thickened. Enjoy with tortilla chips! *I think I’m going to the leftover cheese to make a taco salad this week!

Imagine for a moment Jim and Bones introducing Spock to nacho cheese (vegan, of course.)

  • Spock at first questioning their attempt to get him to eat human junk food, even if it is made from vegetables rather than dairy
  • and then finally giving in and tasting it on a baked tortilla chip and going silent for a moment before begrudgingly admitting that it does have a certain allure to it
  • The three of them sharing bowls of nachos during shore leave
  • Spock finishing his first and eyeing Bones’s when the doctor sets his aside and doesn’t touch it for minutes on end
  • Bones noticing
  • Bones offering the bowl to Spock, who immediately accepts it while claiming it would be against logic to let perfectly good cheese go to waste
  • Kirk and Bones sharing grins behind Spock’s back while Spock concentrates on scooping up every last drop of cheese
  • Spock offering to take the now empty bowls to the kitchen while Jim and Bones continue a game of cards
  • Spock disappearing for longer than it takes to stick dirty bowls in the sink
  • Bones getting up after his fourth win and going to the kitchen to get some drinks
  • and entering just in time to catch Spock scooping the last of the left-over cheese from the pot still on the stove with a giant spoon and sticking it in his mouth
  • and quickly disposing of the evidence by dropping the spoon back in the pot and regaining his composure while the doctor slowly grins
  • “It would be wasteful to throw half a pot of cheese away–”
  • “JIM”
  • “–while it is still edible, I saw no reason to–”
  • “Captain, there is nothing to see, the doctor is simply being–”
  • Doctor, I do not–”
