vegan mince pie recipe




  • 1 cup blended carrots
  • ½ cup blended zucchini
  • ½ blended mushrooms
  • 1 can of lentils
  • 2 garlic cloves
  • 1 chopped brown onion
  • garlic powder
  • pinch dried oregano
  • pinch dried parsely
  • 1 cup peas
  • 2 cans of diced tomato
  • big splash red wine
  • salt and pepper
  • 1 tps olive oil

Potato topping:

  • Boiled potatoes
  • 2 tbs lemon juice
  • sprinkle garlic powder
  • salt and pepper
  •  2 tbs olive oil or vegan butter
  • bread crumbs
  • 2 tbs nutritional yeast (optional)

Blend together the carrots, zucchini, mushrooms, garlic and onion for a few seconds until it is a mince like consistency. Transfer these into a pan with the olive oil and cook for a few minutes. Then add in the garlic powder, peas, lentils, tinned tomatoes, red wine and salt and pepper. Simmer away for around 15 minutes. While this is cooking, mash up the boiled potatoes and add in the lemon, salt and pepper, garlic powder, oil and nutritional yeast. Once completed, create the “mince” layer in a big cooking tray, then add on the potato topping, then finally sprinkle on the bread crumbs and drizzle over a little olive oil. Bake for around 20 minutes or until the top slightly browns. Enjoy! 🌟
