I’ll post more details later. These are “Peanut Butter Swirl Lentil Brownies,” and if they’re good I’ll post the recipe I concocted for them. If they suck you’ll never hear about it again. That’s kind of the Russian roulette with cooking experiments, yeah? Sometimes you make dog food (do not feed to dogs). We can at least appreciate that they do look gorgeous, right? Not gonna lie, I ate some of the baking chocolate. I’m one of those psychos that love 100% unsweetened chocolate. That’s how deep my chocolate love goes. Even if these don’t hit the spot for dessert, maybe they’ll be a good hiking/trail snack? Once summer hits I’m going to start these epic several hour treks across Metro Park.


Homemade 3 Ingredient Energy Bar

Ingredients Equal Parts:

  • pitted dates about 1 C
  • almonds or almond pieces about 1 C (or nuts of your choice)
  • raisins about 1 C or dried cranberries
  • ½ C sunflower seed (optional)


  1. Place all ingredients into food processor and blend.
  2. Press between 2 sheets of parchment paper in 9 x 9 or 8 x 8 square pan.
  3. Refrigerate for at least a few hours or overnight.
  4. Cut into 2" squares, separate and wrap with waxed paper.
  5. Store in airtight container.

Dates are very nutritious and paired with nuts are a great energy booster. Sticky but yummy



that’s what happen when i’m in the mood to experiment.


  • 200g oat flakes
  • 2 ripe bananas (about 200/160 grams)
  • 40g goji berries
  • cinnamon to taste
  • 2 tbs of truvia to make a crust on top of the bars.

smash the bananas and mix them with oats and goji berries until the mixture will be compact, then put it in a baking tin covered with baking paper and press it with the back of a wooden spoon to level the surface to about ½ cm thick. bake at 180° for 5 minutes, pull out of the oven and cover with truvia, then put it back in the oven for 10/15 minutes and let it cook until the mixture will be golden. when it will be ready cut into bars and let it cool.

As January comes to a close, we wanted to share a final recipe using a featured ingredient from our 2014 health food trends list.  We’re rounding out the month with hemp seeds, an organic and plant-based source of protein. Hemp protein is easier for the body to digest than soy, and is lower in saturated fats than other traditional sources of protein.

These vegan bars make a great breakfast or snack and stay fresh in the fridge for several days.  Unlike many store-bought energy bars, they are free of refined sugar and preservatives, so you can snack healthy and without any guilt!


  • 8 medjool dates, pitted
  • 7 unsweetened turkish apricots, chopped
  • ¾ cup sprouted whole wheat flour
  • ¾ cup rolled oats (not quick cooking)
  • ½ cup sliced raw almonds
  • ½ cup dried unsweetened cranberries
  • 1/3 cup flax seeds
  • 1/3 cup unsweetened apple sauce
  • 1/3 cup hemp seeds
  • 3 tbsp shredded unsweetened coconut
  • 2 tbsp organic coconut oil, melted
  • 2 tsp vanilla extract
  • pinch of sea salt


  1. Preheat oven to 350 °F
  2. Place pitted dates in food processor and chop
  3. Add melted coconut oil and flour into processor and grind to make paste
  4. Mix all other ingredients together in separate bowl
  5. Combine date paste with other ingredients in bowl and mix together thoroughly
  6. Line 8 x 8 pan with parchment paper, and spread mixture evenly in pan
  7. Bake for 20-25 minutes, or until edges are golden

Yields roughly 12 bars. Approximate calories per bar: 175.

Nuts and seeds, Oatmeal, Tofu, Beans, Avocado, Blueberries and dried fruit, Hummus and lots more! There’s a lot of vegan energy/meal bars too if you’ve got Luna, Cliff or Lara bars are your stores (check ingredient some have milk). Vega also makes protein shake mixes. Could have tofu scramble with veggies, or a green smoothie and throw some almonds in there. Or even hummus with veggies/chips with dried fruit or nuts. Be creative and mix and match. It’s always good to have a big breakfast.
