vegan coconut cake

Vanilla Cake:
2 ½ cups all purpose flour
1 ½ tsp baking powder
½ tsp salt
1 ½ cup almond milk
¾ cup coconut sugar
¾ cup coconut or almond yogurt (I used both)
1 tsp vanilla extract
Preheat oven at 350F(180c). Whisk the dry ingredients until well combined. In a different bowl whisk all of the wet ingredients and stir into the dry. Mix to make a smooth batter and transfer to greased or lined cake pan. Bake for 30 to 40 minutes or until toothpick from the center comes out clean.
Toped with: Melted Chocolate: combine 2 tbsp cacao powder, 2 tbsp melted coconut oil and 2 tbsp agave nectar.⭐️

🍫🍫🍫When it’s gloomy 🌧🌫 outside I think it calls for a random dessert (am I reaching…yeah probably haha 😂). I used some lil slices of probably the most delicious brownie (@chocolatecoveredkatie sweet potato brownie) and just some milled flaxseed, almonds, blueberries and cherries 🍒 topped with a little coconut 👌👌👌😍😍😍🤤🤤🤤

Chocolate Chip and Coconut Oil Cookies


  • 30g coconut oil
  • 2 tbsp almond milk
  • 45g brown sugar
  • 70g plain flour
  • ½ tsp baking powder
  • 1/8 tsp salt
  • 35 g chocolate chips


  1. In a mug microwave the coconut oil with the almond milk until melted and stir together.
  2. In a medium bowl, use a rubber spatula to mix the oil mixture with the brown sugar until completely smooth.
  3. Sieve together the flour, baking powder and salt, then add to the wet ingredients and stir before finally adding the chocolate chips. Leave the dough to firm up in the fridge for up to an hour.
  4. Meanwhile, pre-heat the oven to gas mark 4.
  5. When the dough is firm enough to be handled, form into 6 balls and lay on a tray line with baking parchment.
  6. Bake for 12-14 minutes, until slightly golden at the edges.
  7. Remove from the oven and allow to cool completely before storing in an air-tight container.

Notes: This is only a half batch, so good for when you want something just for you and your fam. The coconut oil really comes through in the final taste and I’m really happy with this recipe. They’re like imitation Betty Crocker cookies.
