I just found a “vegan” blog where the op occasionally “saves” “escaped animals” (or “smuggles them”) from their “campus lab” by stuffing them into tiny, ill furnished enclosures that fail to meet their needs for survival. And then ignores or makes excuses when people point out the poor husbandry.

My sodium levels have spiked this evening.  

Last dinner before I move out to go to college 🚕  🚕  I think I’m still in a stage of denial 😂  If any of you are at uni and have any advice please message me! I had some nourishing buddha bowls tonight because I’m trying to use up all of my food before I leave-brown rice, lentils, quinoa, baked crispy eggplant with maple syrup drizzle (you need to try this-finely slice your eggplant and bake it until crispy and golden and drizzle that sugar onnnnn) I also baked some sweet potato, sweet corn and portobello mushrooms with garlic and oml the mushrooms they burst with liquid when you bake them and they taste heavenly) bok choy, sprouts, tomato, radish, beetroot (I feel like this list is going on forever) baked vegetable patties I made with chickpeas, indian spices, quinoa, spinach, pumpkin and a tbsp of wholemeal flour aaaand some bread w hummus because nothing can beat a good piece of fresh market bread with that heavenly chickpea concoction 😍😏😋   Probably exceeded my daily protein requirements with just this meal alone ahaha 😎

Vegan Quinoa Stew

Ingredients:

  • ½ cup uncooked quinoa
  • 1 tbsp tomato paste
  • 1 ½ cups vegetable stock
  • 1 large red pepper
  • 1 can crushed tomatoes
  • 1 tsp paprika
  • 2 cloves garlic
  • 1 small onion
  • 200 grams veggie ground
  • 1 baguette (optional)
  • pinch of salt and pepper to taste 
  • ½ tsp sugar
  • 1 tbsp olive oil

Directions:

  1. Mince the garlic, onion and dice the red pepper and set a side. Heat a large sauce pan with some oil and add the garlic and the onion and cook for about a minute. Then add the pepper, tomato paste, and the veggie ground. Cook on medium high heat for about 5 minutes. 
  2. Add the veggie stock, the canned tomatoes and quinoa to the pan and stir well to combine. Stir in the salt, pepper, sugar, and paprika and cover with a lid. Cook on medium low heat for about 20 minutes or until quinoa is to your desired consistency. 
  3. Serve in a bowl with some baguette (highly recommended) and enjoy your meal. 

For our post workout lunch we headed out for vegan sushi! We loveeee dipping them in organic coconut amminos! Seriously try it guys! It’s a great alternative to soy or other high sodium sauces. And if you haven’t seen our newest VLOG, check it out guysss! Link is on our page.

Vegan Mushroom Udon Soup

Ingredients:

  • 1 tbsp sesame oil 
  • 1 Onion quartered
  • 3 garlic cloves minced
  • 1 tsp chilli paste
  • 10 fresh mushrooms sliced
  • 6 fresh shiitake mushrooms
  • 4 Cups fresh water
  • 1 bay leaf 
  • 1 Hand size Kombu
  • 5 dried shiitake mushrooms
  • 5 Green onion stems
  • 2 tbsp vegetable broth powder
  • 2 tbsp soy sauce
  • 3 packets udon noodles

Directions:

  1. Heat up oil in a large pan and add the onion cook for a minute on medium heat. Add garlic, chili paste and fresh mushrooms and cook for another minute or two.
  2. Add water and remainng ingredients except the noodles. Cook with a lid for 40 minutes on low. 
  3. Before the soup is finished cook the noodles according to the directions listed on the package. Put the noodles in a bowl and pour the mushroom broth on top.
  4. You can decorate and garnish with whatever you please. Use green onion, vegan egg, more mushrooms etc. Enjoy this warming dish!

Only just found out udon noodles are actually vegan what have I been doing for the past 8 months of my life 😪 😂 Served them up with stir-fry veggies and some crispy maple tofu and peanut sauce 👌 The best meals are just your fridge contents thrown into a bowl right??

Vegan Pink Unicorn Hot Chocolate

Ring in the new year with this pretty warming drink!

Ingredients:

  • 2 cups of soy or hemp milk (You need a thicker non dairy milk)
  • 100 grams shredded vegan white chocolate
  • 1 cup of froze strawberries
  • 1 tbsp red food coloring
  • 1 tsp vanilla extract
  • Vegan whipped cream
  • Pretty sprinkles

Directions:

  1. In a small pot heat up the milk, do not boil. Then add shredded white chocolate and constantly stir on low heat. 
  2. Microwave the strawberries or 2 minutes. You will find that the berries have lost a lot of juice.
  3. Strain the strawberries and the juice into the pot and stir. 
  4. Add the vanilla and the food coloring. Stir until combined. 
  5. Pour the hot chocolate into glasses and decorate with whipped cream and pretty sprinkles (this makes the drink more magical). 
  6. Enjoy and have a safe and happy new year!

Pasta Aglio e Olio: a 6 ingredient fucking treat. Made this last night and the boy is literally out at the store right now buying pasta so we can make more 😋😋

Had a lot of fun making these orange and chocolate cheesecakes today :) 

Base: dates, oats, 1 tsp molasses, zest of orange, cocoa powder, almonds, desiccated coconut and cashews and blend :) Filling: 1 can of coconut cream, maple syrup, vanilla essence and 1 ½ cups of softened cashews blended (I boiled mine for about 10 minutes) I also separated the mixture in half and added 1 tbsp cocoa to one halfFroze them overnight and topped with melted lindt 85% dark and @lovingearth salted caramel chocolate maple buckinis, orange zest and chocolate shavings 😋👌🍊🍊
