Here’s a slow cooker recipe that I found shortly after I went vegetarian and wanted some beef stew. Although there’s a bit of prep involved, it makes a huge quantity, so you can eat it all week. I’ve adapted it slightly from vegweb.com.
Add everything except the cornstarch to the crockpot and crank it to high. Mix the cornstarch little by little with water until it is a smooth paste, and pour it over the veggies. Stir everything up and let it go for about 6 hours.
