Look Pretty on a Bad Hair Day

We’ve all been there.  You get out of bed in the morning, walk over to the bathroom mirror and your hair looks like a tornado went right through it – twice.  What’s a girl to do?  Here are three easy hairstyles that will have you looking fab in no time.

The Side Braid:  Braids are making a comeback whether you want to believe it or not.  Side braids look casual chic and perfect if you have wavy or curly hair.  It keeps everything in place.  Work some mousse through dry hair and loosely braid your hair to the side.  Finish the look off by tousling the top of your head for fullness and spritz some hairspray to keep loose strands from getting too messy.

The High Bun:  We all have those days where we just want to keep our hair out of our face and this is perfect for those days.  it works for both long and short hair.  Ideally, the bun should be placed at the crown of the head.  It will draw attention to your eyes and cheekbones, giving your face a lift.  Spritz texturizing spray onto dry hair and scrunch for volume.  Gather hair into a loose bun at the top of your hair and secure loose strands with bobby pins.

The Ponytail: Create a sophisticated look by creating a deep side part.  Star by adding defrizzing serum throughout damp hair, then blowdrying straight with a paddle brush.  Line the cob with the arch of your eyebrow and create a part.  Secure hair with an elastic  at the nape of your neck.  Tame any loose baby hairs with hairspray.

The best part of my day is being with you. I might get fall down and lose it all, that’s my daily thought. I might get my heart broken, torn apart and turn into little pieces, but I cannot really rely on myself. It’s hard not to fall in love with you, you know. You always have my heart and make me happy, sad, mad, frustrated, excited, emotional. Basically, you make me feel human, you make me feel alive. I get to experience and feel all emotions in the world when I’m with you, when I talk to you, when I hear your voice. And all of my thoughts and fear fade, because you are worthy of my vulnerable heart. And I don’t have to feel scared that you’ll break my heart, because I know you will, inevitably. Someday. But it’s okay. It’s not the it’s-fine-if-you-hurt-me-whenever-you-want-to okay, but it-will-be-alright-to-be-hurt-’cause-I-know-you’re-madly-in-love-too kind of okay. Love doesn’t guarantee you that you’ll not get hurt. You will be, sometimes. You will be someday. Love guarantees you will be in pain. But also guarantees you will be happy. And I love to feel both ways. I love you, my Hulk. My pain in the ass. My love of my life. My partner in crime. My protector. My totsy :) Thank you for the three days of happiness and for the future lifetime happiness. I hope (crossed fingers) and I pray.

How To: Make the Ultimate Comfort Food – Grilled Cheese

So, we don’t really know who decides these things, but April is National Grilled Cheese Month.  Who doesn’t love a salty, buttery, toasted slice of bread sandwiching ooey gooey cheese??  It’s the ultimate comfort food.  We at Totsy love it and our perfect grilled cheese sandwich is kid-approved!  Your little ones will love this!

Servings: 2 sandwiches

  • 4 slices of white sandwich bread
  • ¼ pound cheddar cheese, slice 1/3" thick
  • Unsalted butter, room temperature

What You’ll Need:

  • Skillet - cast iron works best
  • Spatula
  • Knife

  1. Heat the skillet on low heat and add enough butter to coat the pan evenly.
  2. Assemble the slices of bread with the cheese and gently press them together to hold them in place.
  3. Put the sandwich in the bottom of the pan.
  4. Cook over low heat.  Use the spatula to check for a golden brown color after 5 minutes.
  5. After a golden brown color has been achieved, flip the sandwich over and check after 5 minutes for the same golden brown color.  Cheese should be completely melted at this point.
  6. Plate the sandwich and serve with a bowl of tomato soup.  Yum!

Healthy alternatives:

  • Use whole wheat bread.
  • Look for cheeses made with skim or part-skim milk.
  • Instead of butter, use an olive oil spray.  If you really want that buttery taste, use non-hydrogenated, omega-3 butter liek Smart Balance.
  • Add a slice of tomato - added dose of vitamin C and lycopene.  Research shows that lycopene can prevent certain types of cancer.

Dine with Diana: Pasta Anyone?

Believe me, I know what it’s like to have to cook for the family after an already exhausting day of work, cleaning, and picking up the kids from camp. That’s why I’ve grown to stow a few quick and simple recipes up my sleeve when time is tight and the tots are hungry.

Here’s a pasta dish the whole family can enjoy. Best of all, it doesn’t take hours to prepare and is super easy to throw together – I’ve been doing it since high school when my parents had to work late.  Keep reading and you’ll discover my secret ingredient!

Moms, get ready to savor this dish and all the time you save!

I use whole wheat pasta and jarred sauce – the one with real ingredients, so that means no fillers, no sugars.  You can also puree some leafy greens and “hide” it in the sauce.

  1. Heat olive oil in a pan and saute onions and garlic.
  2. Add ground chicken, it’s healthier and has less fat than beef. Cook this until it is slightly browned.
  3. Throw in the sauce and pureed leafy greens.
  4. Season with salt, pepper and oregano.
  5. Now get ready, this is the secret ingredient: BBQ sauce.  Add a dash of this into the mixture and stir all together.
  6. Add fresh Parmesan cheese and fresh basil on top and serve while hot!

Here are some more tips:

  • Use penne or spiral pasta and spaghetti gets too messy
  • Try using ground turkey as an alternative
