The boss fights in God of War III were intended to be incredible finales to longer sections of combat, that would force the player to think around their abilities in a much different manner. One major way they created bosses that could feel suitably different enough to provide this was in a constant variation in size for these bosses. In doing this, the player must take on enemies that require different approaches than the standard crowds they face throughout the rest of the game.
