🌶🌶🌶😍Korean braised tofu for dinner today. At 673 calories (including kimchi) for the entire block of tofu, you can’t go wrong really haha 😍👌🌶🤤

One block of drained firm tofu
Cut into about 1cm thick blocks and in a very non stick pan (or a pan with oil) fry gently on both sides until browned. Poor sauce and give them a good shimmy until the sauce completely reduces and covers them.

Sauce:

5 heaped tsps of gochujang (uk people I recommend getting it on amazon instead of at the shops as it’s a rip off in supermarkets 😉)

1 tbs syrup (I used maple but brown rice syrup would be better I think)

Garlic ( I like a LOT of garlic so used a very heaped tea spoon but it’s up to you!)

Water ( just to make it about the same viscosity of pasata/ pasta sauce. I think maybe 1/3 a cup)

Optional add a tbs of light soy and ¼ tsp vinegar for extra sass.

Garnish with spring onion (scallion) and toasted sesame seeds.

Sometimes you just gotta eat a whole zucchini…

Slice zucchini, place on a plate with soy sauce, coat both sides, heat pan with tiny bit of peanut oil (or whatever oil), plop zucchini in the pan, wait & flip, season with salt and pepper, plate & top with toasted black and white sesame seeds!

Super easy, super delicious, super making this again tomorrow night (but adding some protein)

               -If we’re going American food, I think he’d really like hot pockets

               -I mean come on?? They’re fast?? And hot?? And come in so many different ways? Not to mention they can be chEAP

Vegan sushi bowl

1 tbs dry pan toasted sesame seeds
½ small avocado (or ¼ large)
½ sheet roasted nori, ripped into small bits
Shredded cucumber
¾ cup cooked brown rice
½ soy sauce

I mushed the avocado with soy sauce then mixed it with my rice. Once rice was coated I added sesame seeds, nori, and cucumber. Would have been amazing with some crispy tofu and a side of steamed edamame.

40g carbs, 10g fat, 7g protein, 270 calories

Sambal Honey-Barbecue Wings

Ingredients for Wings

Chicken wings, separated into drums and flats 

5 tbsp baking powder 

4 tbsp spice blend (I used a shortcut here) but you can use:

1 tbsp onion powder

1 tbsp garlic powder

½ tbsp chili powder

½ tbsp smoked paprika 

Directions for Wings

Preheat oven to 400 degrees Fahrenheit, line a baking sheet with parchment paper or aluminum foil and top with a wire rack and set aside. 

Clean chicken wings and pat dry with paper towels. 

In batches, toss the wings in the spice blend and place on the wire rack and bake for 20 minutes on one side. 

After 20 minutes, flip the wings onto the opposite side, bake for another 10 minutes. Flip one final time and bake for a final 15 minutes, until crispy and golden brown.

Ingredients for Sauce/Glaze

4 large tablespoons of Sambal (chili garlic sauce) 

3 tbsp raw honey 

2 tbsp homemade barbecue sauce (or store bought if you only have that)

Splash (about 2 tsp) rice wine vinegar 

1 tsp chili oil (be careful because it is SPICY) 

½ tsp pure sesame oil 

3 tbsp cilantro, finely chopped 

Toasted sesame seeds, for garnish 

Kosher salt and pepper, to taste

Directions for Glaze 

Combine all ingredients, and adjust to taste. 

Assembling the Dish 

Once the chicken has finished cooking, let rest for about 5 minutes and assemble the glaze. 

Toss the chicken in about ½ of the glaze 

Plate and drizzle the remaining glaze. 

Garnish with sesame seeds and more fresh cilantro.

Roasted Cauliflower with Lemon Tahini (Tapas)

Ever since I ate tapas at a vegan Vegas restaurant, I been wanting Jain tapas. This is one recipe I’d love to try soon because all ingredients are easily available and it’ll take literally minutes to make. Eat small portions, that’s what tapas mean.

Ingredients

  • 1 large head cauliflower, cut into 1-inch florets (about 1 ½ lb.)
  • 4 tsp olive oil, divided
  • 2 tbsp tahini
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • 1 tbsp chopped parsley
  • 1 tsp toasted sesame seeds (optional)
  • ¼ tsp paprika or crushed red chili peppers

Instructions

  1. Place oven rack in top position. Preheat oven to 425°F.
  2. Toss cauliflower with 2 tsp. olive oil, and season with salt. Spread on large cookie sheet, and bake 12 to 15 minutes, or until cauliflower is fork-tender and slightly browned.
  3. Heat remaining 2 tsp. olive oil in small saucepan over medium heat. Stir in tahini, lemon juice, 5 Tbs. water, and salt. Simmer over low heat 1 to 2 minutes. Remove from heat.
  4. Divide cauliflower among plates. Whisk sauce, then spoon over cauliflower. Sprinkle with parsley/chives and sesame seeds/paprika, and serve.

🌶🌶😍🌶🌶 when you have a hankering for tteokbokki but live in a pace that you can’t easily get rice cakes (😓)

Ladies, gentlemen and Other I presented to you gnocchi-tteokbokki Gnoccbokki 😅😬🙃
Just brown your preferred gnocchi (I had a random gluten free one) in a non stick pan (or a pan with a little oil) the add the sauce and cook on medium for about 3-5 mins until reduced and glossy

To make the sauce follow the braised tofu recipe and add 1 + ½ cups (approx) of water 🤘👌

Top with chopped spring onion and toasted sesame seeds

THE RECIPE

INGREDIENTS (serves 2)

Chicken and marinade

• 300g chicken

• 3 tbsp toasted sesame oil

• 3 tbsp tamari

• 1-2 tsp sriracha (depending on how spicy you like it)

• 1 garlic clove

• 2 spring onions

• 0,5 radish

• 1 carrot

• 2 chili

Broth

• 2 inches ginger root, sliced into coins

• 4-6 four inch square sheets kombu

• 6 dried shiitake mushrooms

• 2l water

• 140g sweet white or yellow miso

• 2 tbsp tamari (optional)

• 1 lime (juice of)

Toppings

• 100g mung sprouts

• 1 egg

• Bunch of coriander

• Toasted sesame seeds

• 330-440g soba noodles (depending on how noodle-y you like it)

DIRECTIONS

Chicken and marinade

1. Squash the garlic with a knife and mix with the other ingredients for the marinade, using a stick mixer.

2. Rub the chicken in the marinade and let rest for 20 minutes.

3. Cut chicken into slices. Fry in a pan on medium heat.

Broth

4. Mix together mushrooms and ginger with miso paste, adding tamari as needed.

5. Bring water to a boil. Add the miso-mix to the water and stir. Add kombu leaves and season with lime juice to taste.

Toppings

6. Boil water and put the noodles in the water. Let rest for 5 minutes.

7. Cut radish, leek and chili into small wedges. Keep them in separate bowls.

8. Boil an egg for 3 to a soft consistency.

9. Place noodles into broth, adding the vegetables, chicken and egg.

10. Top with coriander and sesame seeds.
