And the Oscar goes to….Last night was Hollywood’s biggest night of the year, The Oscars! I had some friends over to watch, so of course I made healthy snacks to keep us energized throughout the lengthy awards show. We had my signature Crispy Sweet Potato Chips, Avocado Chicken Salad, Sweet & Salty Popcorn, standard chips and salsa and of course, red wine and some sea salt dark chocolate truffles. I wanted to share with you my Avocado Chicken Salad recipe and my Sweet & Spicy Popcorn recipe. Now that the Oscars are over, those of you that are fans of the nbcthevoice or bachelorabc, I suggest inviting some friends over tonight to watch these shows and trying out my healthy snack recipes :) 

 Avocado Chicken Salad 

 Ingredients: 

 1 boneless skinless chicken breast 

 1 avocado 

 1-2 tbsp of olive oil 

 4-5 celery stalks 

 1 tomato 

 Sea salt and pepper 

 Red pepper flakes 

 Balsamic vinegar 

 Preparation: 

1. Cook chicken breast in oven on 350 degrees for 20-25 minutes (season chicken with olive oil, salt and pepper) or you can use canned tuna if you prefer, I also love to make this with tuna. 

2. Slice chicken into very thin pieces  

3. Chop 1/2 of a celery stalk into small pieces 

4. Mix chicken with avocado, olive oil, chopped celery, salt and pepper (enough to taste) and sprinkle a few red pepper flakes to add a little spice (I also like to add a little lemon juice if I have a lemon on hand) 

5. Cut 2-3 celery stalks into halves and cut tomato into thick slices 

6. Scoop chicken salad on top of tomato slices and inside celery slices 

7. On top of tomatoes and celery boats, add a little salt and a splash of balsamic vinegar 

Sweet & Spicy Popcorn 

Ingredients: 

3/4 c popcorn kernels 

 2 1/2 tbsp olive oil 

 Cholula hot sauce 

 4-5 dates 

 Sea salt 

 Preparation: 

1. In a medium pot over medium heat, add olive oil and popcorn kernels, cover pot and wait for kernels to pop 

 2. Chop up dates into small pieces 

 3. Pour popcorn and dates into a large bowl - pour a generous amount of Cholula over popcorn and mix together with your hands (make sure not to add too much sauce as it will make the popcorn soggy) 

 4. Add some sea salt on top and mix together

Spicy Roasted Brussels Sprouts

This is one of my go to side dishes that I wanted to share with you. I love brussels sprouts! They are easy, healthy and so delicious.

Ingredients:

Brussels sprouts

Olive oil

Balsamic vinegar

Salt

Pepper

Cayenne Pepper

Preparation:

1. Preheat oven to 400 degrees
2. Cut brussels sprouts into halfs
3. Place brussels sprouts on cookie sheet or baking pan
4. Drizzle olive oil on top, along with balsamic vinegar
5. Then sprinkle the salt and pepper and as much or as little of the cayenne pepper as you would like, this just adds a little spice to them (you don’t have to use the cayenne pepper if you don’t like spice)
6. Use your hands to toss the brussels sprouts around on the cookie sheet so all seasoning is distributed evenly
7. Roast in the oven for about 20mins.

Today I wanted to touch on one of my favorite drinks called kombucha. It is essentially fermented tea that contains probiotics. It is definitely an acquired taste, but I highly recommend at least trying it because of all its health benefits. Below is a list of some of the health benefits this drink provides:

  • Immune Support
  • Reduces Joint Pain

You can find kombucha at your local health foods store, or if you’re feeling confident, try to make it at home, I’ve never done so, but there is a recipe in the article above, good luck! 

Blackberry Oatmeal

I made a great oatmeal concoction the other day that I want to share with you. I raided my cabinets to figure out what I could put in my oatmeal to spice it up. Here is what I came up with:

Ingredients:

Purely Elizabeth Ancient Grain Oatmeal
6 Blackberries
1 Date
1 1/2 c vanilla unsweetened almond milk
1tsp honey
Cinnamon

Preparation:

1. Follow cooking instructions for oatmeal on bag. I made mine with almond milk.
2. Chop up one date into tiny pieces
3. Mix blackberries, dates and about 1/2 cup of almond milk into oatmeal
4. Drizzle honey and cinnamon on top
5. Enjoy!

Got the sniffles?

I’ve been fighting a cold the past few days as I’m sure many of you have too, as the weather is constantly changing here in Chicago! In order to help fight it, I stocked up on some fruit. I felt that my body had been lacking it lately. I find that I know my body well and can usually tell what it’s missing. I’m feeling a whole lot better today, so I thought I’d share with you some of the steps I took to make sure my cold didn’t get any worse and that I had a speedy recovery.

Tips for fighting a cold:

1. Drink lots of herbal teas (caffeine free or decaf) - I drank at least 2-3 cups of tea a day
2. Drink LOTS of water! Keep hydrated and flush out your body by drinking lots of water
3. No sugar! Sugar only weakens the immune system so stay away from sugar especially when you are feeling sick. Natural sugars, like in fruits, are ok.
4. Sleep. Make sure you get plenty of sleep and don’t over do it
5. Eat your fruits and veggies - these can help to naturally heal your body
6. Vitamin C - I have a natural powder that is pure vitamin C that I mix into water. This is a way to get a lot of vitamin C into your body, but also by eating foods that are high in vitamin C like oranges is great
7. Echinacea and Zinc: these are both great herbs to take as soon as you start to feel sick. I bought some natural herbal lozenges from my local health foods store that had both zinc and echinacea in them. I had a couple of these a day and they seemed to really help, they taste great too! You can also find echinacea in a liquid form, which you can put in water or tea, or in a pill form.

Veggie Tales 

Last night I made a very veggie filled dinner. I must say, both dishes were flavorful and filling. I wasn’t sure what to make for dinner so I resorted to my standard tactic, searched my kitchen and used what I had to come up with something yummy and healthy. Both dishes are easy to prepare, nutrient filled and very tasty. I also had a cup of green tea with dinner, I had left over tea from the afternoon that got cold so I drank it as iced tea and added some cold water to it. See below for recipes.

Crispy Kale Chips

I had some kale in my fridge that I needed to use up before it went bad, so I decided to make Crispy Kale Chips. I also had some potatoes to use up so I made my roasted sweet potatoes and red skinned potatoes as well. See below for my Crispy Kale Chip recipe, they are super easy!

Ingredients:

Kale
Olive oil
Sea salt and pepper or any seasoning you like

Preparation:

1. Preheat oven to 400 degrees
2. Break up kale into pieces removing from the stem
3. On a baking sheet, spread out kale evenly
4. Pour a generous amount of olive oil over the kale, along with sea salt and pepper or whichever seasoning you’d like (I used a tiny bit of my fajita seasoning too)
5. Using your hands, toss the kale around so that the oil and seasoning are evenly distributed throughout
6. Bake for 10 mins
7. Let cool and enjoy!
