Finals are starting this week, and as a stress bake, Heather and I made these Eggnog Cheesecake Thumbprint cookies. Instead of two sticks of butter, we used ¼ cup of coconut oil and subbed the remainder with applesauce. The dough turned out kind of sticky, so you may want to use less applesauce if you’re cutting back on the oil (you can use milk or water if you need more moisture). They’re deliciously gooey and sweet.
