Yellow Cake with Chocolate Buttercream!

My husband’s favorite type of cake is a yellow cake with chocolate icing so I have started a quest to find a good homemade recipe for just that. This is a recipe for a 3 layer 9 inch yellow cake, but I cut it in half and made a smaller cake. I used a chocolate buttercream for the icing.

I will be honest, after tasting the cake I was a bit disappointed. If you are looking for a yellow cake to rival the Betty Crocker box cake then this is NOT it… However, the cake reminded both my husband and me (we both came to this conclusion separately) of a sweet corn bread which is peculiar because there is no corn or cornmeal in it. At least it looked pretty!

Butterbeer Cupcakes

A few months ago my husband and I started hosting a dinner and a movie night once a week. We have been working our way through the Harry Potter series and finally finished last weekend (I have mixed emotions anytime Harry Potter comes to an end). In honor of the movies I decided to try my hand at making some butterbeer cupcakes. I found this recipe on Pinterest and have been dying to try them!

Hot Roast Beef Sandwiches

These delicious roast beef sandwiches are perfect for lunch! (…or dinner, you just might want to eat two!) They are simple to make and are easily made ahead of time! The cheese in the sandwich gets gooey when you heat it up and the sauce has a nice tangy flavor from the horseradish and mustard. Pair that with the thinly sliced roast beef and you get a perfect balance of flavors!

Grow Your Own Green Onions

See the green onions in the picture above? I grew them!!! And it was super easy! All you need is green onions, a glass, and water! Next time you buy green onions chop off the bottom 2 inches and throw them in a glass of water. After about two weeks they will grow back and look the same as the day you bought them! (You will need to refill the water every few days.)

Chicken Enchiladas with a Green Chili & Sour Cream Sauce

I love Mexican food! When I say ‘I want Mexican food’ that actually means 'I want enchiladas!!!!’ so let me start over. I love enchiladas! When I get a craving for enchiladas that used to mean I would have to go to a Mexican restaurant, but since I have found this recipe, I have been able to make delicious enchiladas from home that satisfy my cravings!

Chicken Fried Rice

Whether it is the main part of my meal or on the side, I always order chicken fried rice when I get Chinese food. How could I not? It is so delicious! My husband and I have been trying to find a good chicken fried rice recipe for about a year now and we have finally found a good one! By combining a ideas from a few different recipes we have manages to create a recipe that tastes just like take out!

Baked Sesame Chicken

Ok, this is officially the best sesame chicken we have made thus far! We have finally found a method of cooking the chicken that makes it taste like it came from a Chinese restaurant!! And the best part is that this recipe is extremely versatile! You could easily substitute the sesame sauce for a General Tso’s sauce, orange chicken sauce, or any other sauce you like!

Stuffed Peppers

These stuffed peppers are great! They are sweet from the red pepper and a little bit spicy from all of the seasonings in the filling. I have seen other people make stuffed peppers, but I had never actually made them so this it sort of a combination of things I’ve had before and things that I just thought sounded good! And it worked out!
