1-Minute Chocolate Chip Cookie in a Mug

Who doesn’t love chocolate chip cookies?  The problem I have is most recipes seem to make enough batter for 2 dozen cookies.  Now if I had 2 dozen cookies lying around my kitchen, I’d probably end up eating every single cookie in a matter of days.  I know this because it happened last weekend.

Just last night I had another craving for something sweet.  Instead of going through all the work of baking and then regretting eating so many cookies, I decided to Google a recipe for just 1 cookie.  To my excitement, I found a recipe for a 1-Minute Chocolate Chip Cookie in a Mug.

Not only was it fast and easy, but this quick cookie recipe was far gooier and delicious than the recipe I tried from Martha Stewart and I don’t feel guilty about having just 1 cookie.

INGREDIENTS:

1 Tablespoon unsalted butter

1 Tablespoon granulated sugar

1 Tablespoon brown sugar, firmly packed

½ teaspoon vanilla extract

1/8 teaspoon (pinch) salt

1 egg yolk

3 Tablespoons all-purpose flour

1-2 Tablespoons chocolate chips

DIRECTIONS:

Microwave butter in a mug until melted, 30 seconds to 1 minute. With a spoon, mix in sugars, vanilla extract and salt until well-combined. Mix in egg yolk until no traces of the yolk are seen. Mix in flour. Fold in chocolate chips.

Microwave on high for 40 seconds, or a maximum of 50 seconds.  The cookie may look undercooked on the top, but be fully cooked below.
