I rode my bike to the forest last week and I got lost for a while! It was amazing :’) also this is last week’s spread! (I’m actually spending most of the time doing nothing but watching movies haha)

Here’s How to Eat Vegan for a Week For Under $50

Some of the most affordable foods on the planet are vegan, including rice, beans, legumes, pasta, and all kinds of fruits and veggies. Despite this, people will often ask us about eating vegan on a budget.

So we’ve compiled some handy tips and tricks that will keep you veg without breaking the bank:

Dry beans are worth the wait.
Sure, you have to soak them overnight, but dry beans are exponentially cheaper than canned. They’re also a delicious, protein-packed essential in a budget-friendly vegan diet.

Buy it frozen.
One great way to save money is to reduce food waste. Frozen veggies like corn, peas, and green beans are great because they last almost forever.

Get into oatmeal.
Yeah, oatmeal is a super secret vegan hack. It’s filling, loaded with iron and calcium, and one of the cheapest things you could eat for breakfast.

Stick with produce under $2 per pound.
When choosing fresh fruits and veggies, try to stick with items under $2/lb.

If you want to splurge, buy some Vegenaise.
Of course you can just use it like mayo, but you can also create sour cream (just add lemon juice), salad dressings, and sauces with this must-have specialty item.

Soup is a thing.
Soups loaded with veggies, grains, and beans hold well as leftovers, stretch your dollars, and make great filling meals!

Stick with staples.
Rice, pasta, and peanut butter are all great choices for affordability and versatility.

Every night can be taco night.
Put those tasty veggies and beans to use inside a toasted tortilla! Add some Vegenaise sour cream and you’ve got yourself a tasty and inexpensive vegan dinner.

-EAT LESS MEAT ( or in general animal products) ! The food industry is one of the main reasons why the global warming is so fast & terryfing. The rain forest probably won’t be there anymore if you don’t do something against it. You don’t have to be vegetarian/vegan but just don’t eat 5 times a week meat/animal products. Once/twice a week is enough
-Use your bike or public transports, or just walk.
-Plant trees!!
-Donate on the websites of Greenpeace etc.

Oil-Free Roasted Potato Wedges with Nacho “Cheese”

2-5 medium sized russet potatoes, rinsed, dried and cut into wedges
¼ cup vegetable broth
2 tbsp. brown rice bread crumbs
½ tsp. garlic powder
½ tsp. smoked paprika
½ tsp. salt

Preheat oven to 400 degrees Fahrenheit. If you don’t have a non-stick baking sheet, lightly spray a baking sheet with a canola oil spray.

Place potatoes in a medium sized bowl and toss with remaining ingredients. Mix to coat potatoes then place on baking sheet and roast for 40 minutes (turning wedges once halfway).

Nacho “Cheese”

1 cup raw cashews, soaked overnight
¼ cup water
3 tbsp. nutritional yeast
1 tbsp. lemon juice
1 tbsp. apple cider vinegar
½ tsp. smoked paprika
½ tsp. onion powder
1 small tomato, peeled

Blend ingredients until smooth. “Cheese” keeps in an airtight container for up to 1 week.

Nutty granola bowl + a cup o'tea.

Coconut Pistachio Granola (Oil-free)

2 cups GF oats
¼ cup maple syrup
½ tsp. cinnamon
1/8 tsp. all spice
¼ tsp. salt
½ tsp. pure vanilla extract
1/3 cup chopped raw pistachios
¼ cup desiccated coconut

Preheat oven to 300 degrees Fahrenheit. Line a large baking sheet with parchment paper.
In a mixing bowl, combine the oats, maple syrup, vanilla and spices then transfer to baking sheet and bake for 35 minutes. Next, remove granola form oven and add pistachios and coconut and bake for another 10-12 minutes or until the coconut is lightly toasted.

Granola keeps for about 2 weeks stored in an airtight container.

Yes, we made the pumpkin spice pumpkin cookies from the 2015 Halloween baking vid! Best fun ever, we had Dan and Phil playing along with us and we had the plushies helping and also Charlotte owns the same little ghostie as them so he was helping us along too.

Dan and Phil plushies helped us the whole way through. The second photo is Dan hugging the jar of his soul (molasses) and then there is also super pastel Dan that Charlotte made in the eight photo.

Seventh photo is all of our decorations - mostly QPR themed with a couple of pumpkins and a ghost for a nod to Halloween (in the middle of March, as you do…)

Basically an amazing night to top off an amazing week and I cried on the train the whole way home

E.T.A: Cookies tasted like Christmas, would 10/10 recommend making these and if you veganise the dough (hit me up for altered recipe it’s fab) then you can munch on the cookie dough as you go.

Took me only 5 weeks to lose with (mostly) raw vegan diet. Drank half my weight in ounces every day, exercise twice a week weight training and went for runs 4-5 days a week. My biggest advice is portion control !!! start slow by going on a few mile walk in the AM & PM. Then start jogging & walking!

Southwest Rainbow Salad ✨

This is one of my faaaavorite salads to make. It has so much good flavor and I always feel so satisfied after I eat it. But I’ll let you be the judge. 😉


Southwest Rainbow Salad

4-6 romaine leaves, chopped
¼ cup shredded red cabbage
½ orange bell pepper, chopped
½ cup black beans, canned or fresh
6-8 cherry tomatoes, halved
½ cup baked tofu (recipe follows)
¼ avocado, diced
Few sprigs of cilantro, chopped
Southwest sauce (recipe follows)

Combine all ingredients in a medium sized bowl and toss with southwest sauce.


Baked Tofu

½ block extra firm tofu, drained and cubed
1 tbsp. gluten free low sodium tamari
Preheat oven to 375 degrees Fahrenheit. Lightly grease a baking sheet with cooking spray or use a non-stick baking pan. Toss the cubed tofu with the tamari then place marinated tofu on baking sheet and bake for 45, flipping tofu once halfway. Remove from oven and allow tofu to cool.


Southwest Sauce

3 tbsp. veganaise or vegan mayo
2 tsp. lemon juice
2 tsp. chipotle powder or adobo sauce
½ tsp. rice vinegar
½ tsp. smoked paprika
½ tsp. garlic powder
¼ tsp. salt

Combine all the ingredients and mix until smooth. Any leftover sauce can be kept in refrigerator for up to a week in an airtight container.
