can we not throw in the towel just yet? i mean if you can’t handle it take a step back and take care of yourself first, please, but we didn’t put all our eggs into this one basket for a reason. It’s most likely gonna be 1/29 or nothing.

Khajiiti apple spanakopita

Spanakopita is a moreish savoury pie filled with spinach and cheese, and the khajiit have added an exciting and delicious twist by adding chopped apples for the perfect sweet and salty hit. The apples complement the flavour without being too overpowering, and add a nice bite to go with the soft textures of the spinach and crumbly cheese and pastry. While it may sound like quite the mouthful to pronounce (say ‘khajiiti apple spanakopita’ 10 times really fast) and possibly a bit strange, this delicacy out of Elsweyr is sure to delight guests at your banquet.

You will need:
1 pack filo pastry dough, thawed
2 red apples, chopped finely
½ red onion, chopped
Olive oil
Juice of ½ a lemon
5 cloves garlic, diced
1 large bunch of baby spinach, roughly chopped
5 eggs, beaten
Assorted fresh and dry mixed herbs of choice (we recommend oregano, thyme, and bay leaves)
2 cups crumbed feta cheese
Salt and pepper, to taste

Firstly, make the filling. In a pan, heat the olive oil and fry the onions and garlic until lightly browned. Add the spinach, apples, and lemon juice, and continue cooking until all the spinach is wilted and no longer soggy. Remove from heat and leave to cool.

In a mixing bowl, combine the feta cheese, herbs, salt and pepper, and eggs. When the spinach mixture has cooled to room temperature, mix together thoroughly. Set aside.

Preheat oven to 190C/375F and prepare your pastry.

Gently, separate your filo pastry into single sheets and dab with olive oil using a basting brush. Layer 8 sheets across the base of a well-oiled baking tray, then cover them with the filling. Cover the filling again with another 8 sheets of filo pastry, and seal the top and bottom together by folding the edges together and basting them with a bit of olive oil.

Bake for 30 minutes, or until the pastry is a deep golden brown. Serve immediately by cutting the pie into squares.


Saddle fitter came out with a demo today



Justin lunged me on him, so not quite a proper ride but still :P but really, this horse hasn’t been ridden in 2 months and i hop on for a lunge lesson and he’s just chill? He’s such a good egg. I am so glad we have this resource up our sleeve. When our saddle is here we will start back that way to get me confident and to just get a positive association with me on his back again. And then onwards and upwards. I am so ecstatic from just sitting on my horse and feeling how much nicer his paces are than this school pony I’ve been riding

But yeah 4 weeks until we get a custom Black Country Eloquence in my hot little hands! I just hope I can sell my KN… I’ve had a look online and the Symphonies seem hard to sell but the Melodies don’t seem quite so bad so maybe I can get closeish to what I paid? But really, 3.9k for a custom is pretty amazing, normally 6k + through most saddlers. So I should just stop complaining. And the interest rates are so shit that although I’ll be taking money out of my savings to pay for it (it’s one of those accounts with an ‘extra high’ interest rate if you don’t take any money out that month), I’ll only be losing like $12 for one month lol.

Anyway, I love my pony. I just want him to be happy, I’m trying so hard. Just be happy pls Arthur.

We all have days where we think we’ve eaten too much, truth is when you add it all together it doesn’t go over the recommended calories for the day - If you’re worried, keep your head up! We can all come back from binge days!!

Things I miss...

the feeling of your lips against mine,

the burnt eggs you cook every morning,

your soft, firm bed that we slept on every day,

the experience of seeing fireflies for the first time with you,

the smell of redwood trees surrounding your home, 

showering together,

when you tell me “I love you” before going to sleep,

and also, you.

Just kidding.

What I really mean is that I wish people learned that judgements are okay to have but that it’s important to act responsibly with those judgements.

We can’t expect green tea or papaya egg tarts to be given the opportunity to achieve the Chinese neighborhood baker goal of popular ingestion if they’re not deliberately demanded for and if bakers aren’t taught how to properly nurture them. Just because people might think all egg tarts are egg tarts regardless of their color doesn’t mean bakers and consumers don’t treat them differently based on the color of their custards. I mean look at the Portuguese egg tarts.  They’re almost the same as the common yellow egg tarts except they have a tan. People go crazy for those but not crazy for the egg tarts of color.

Let’s explicitly make it so we can go crazy for other colors too. Fight for egg tart equity and equality.

Rowdy, Labrador Retriever (13 y/o), Canby, OR • “He has vitiligo. I’ve seen other dogs that have it, but never so symmetrical. His belly and toenails turned white too (he used to be all black). He’s the ambassador for the American Vitiligo Research Foundation and has built some relationships with kids with vitiligo who may have been bullied because of it. He’s also gone kind of viral. He was on the front page of Reddit for days. They said he looks like Spider-Man, Deadpool, The Hamburgler, Spawn, Venom, Kiss, an orca whale, reverse panda, fried eggs…some people think we bleached his eyes. There should be a movie about his life. He’s declining a bit, but there were many times he should have died. He’s been shot by a cop, survived a poisoning, has had a tumor removed from his ear and the wrong tooth pulled. He’s got some dementia, senior bladder, and barks for no reason. He still acts like a puppy sometimes, too. And he still smiles.”
