Basbousa (بسبوسة) is a delicious dessert served in Libya and other North African countries. It’s a sweet cake made of semolina or farina soaked in syrup. Other ingredients include yogurt, melted vegetable suet, baking powder, and almonds. The syrup is prepared from water, sugar, and lemon juice and may contain orange flower water or rose water. Hot tea, coffee and dried fruits are often served with it. It may be topped with whipped or clotted cream.
