Quick Corn & Tomato Salsa
I wish I could give credit for the inspiration behind this recipe, but I found a similar recipe online so long ago, and then tweaked it a bit, that I truly can’t recall. But it is delicious - no doubt about that.
1 15oz can sweet corn, drained (no sodium added, if you can find it)
1-2 tomatoes on the vine, diced
1 bell pepper (orange or red), diced
1 jalapeno pepper, chopped & seeded
½ red onion, diced
1 Tbsp chopped fresh cilantro
1-2 Tbsp lime juice
½ tsp crushed red pepper
1 tsp honey
Salt & pepper to taste
To make it..
1. Stir all ingredients together in a medium bowl. Chill until ready to serve. It’s great in burritos or tacos, or with tortilla chips. That’s it!
