Quick Corn & Tomato Salsa

I wish I could give credit for the inspiration behind this recipe, but I found a similar recipe online so long ago, and then tweaked it a bit, that I truly can’t recall. But it is delicious - no doubt about that.

You’ll need..

1 15oz can sweet corn, drained (no sodium added, if you can find it)
1-2 tomatoes on the vine, diced
1 bell pepper (orange or red), diced
1 jalapeno pepper, chopped & seeded
½ red onion, diced
1 Tbsp chopped fresh cilantro
1-2 Tbsp lime juice
½ tsp crushed red pepper
1 tsp honey
Salt & pepper to taste

To make it..
1. Stir all ingredients together in a medium bowl. Chill until ready to serve. It’s great in burritos or tacos, or with tortilla chips. That’s it!

I can’t take credit for this photograph, but it’ll be a good placeholder until I can take my own.

Hey Joe
where you going
with that eternal nothing
that thousand tongued gun
your head in the sand

Whisper lick last words
math becomes flesh
pantone skin tone gentrified
to Sell! Sell! Sell!

Hey Joe
I think I found
the dead god
who shit in your tuba
He transcended entitlement

He forgot his heart
in his other pants
He feigns fragility
when it get complicated

He’s a good guy Joe
he’d never hurt anyone
he has the good taste
to pretend nothing happened
