one of my favorite things to cook is taco pie: you mix 1 lb of browned ground beef with a packet of taco seasoning and add 1/2 diced tomato and 1/2 diced onion - mix it all together and put in a casserole dish. pour bisquick on top in an even layer, bake for 20 minutes at 400 degrees, take it out and pour shredded cheese on top, and then bake again for 10 more minutes. 😍😍😍

Some meals for the 28 day health challenge. Cheap, affordable and really easy to make. I’m lazy but i still like eating delicious food.
Breakfast: - Fruit salad - Fruit smoothies - Overnight oats with fruit - Breakfast smoothie bowl (Any frozen fruit with fresh fruits) topped with muesli/cereal. - Cereal and dairy free milk - Toast with tofu scramble - Toast with spread (jam, peanut butter and what ever you like). - Toast served with grilled tomatoes, mushroom, spinach and hash brown.

Lunch/Dinner: - Mixed salad with mixed beans - Salads in general (mixed with whole grains, broccoli, pumpkin, beans, leafy salads etc.) - Burrito wrap with beans, tomato and veggies - Tacos, mixed beans, lettuce, tomato and baked wedges - Salad sandwich - Veggie burger with sweet potatoe wedges - Baked potatoe/sweet potatoe with mix salad - Salad bowl - cous cous, mixed veggies, roasted potato and mixed beans - Vegan pizza - tomato paste, garlic, mushrooms, onion, rocket, capsicum, olives, Italian herbs - Cous cous salad - Grilled veggies + tofu and hommus dip - Rice and vegetable stir fry + tofu - Rice, grilled tofu with mixed beans - Hokkien noodle/rice noodle stiry fry with vegetable + tofu - Tom yum noodles - rice noodles, vegetables + tofu - Miso soup noodles - rice noodles, vegetables + tofu
Generally, i have a big lunch and smaller dinner but always eat till satisfied. Simple little meals that i make on a daily basis, to which i’ll will play around with for the challenge. And of course there will be other meals on the menu which may use a little bit more expensive ingredients, e.g. quinoa, chia seeds, mushrooms etc.
Hi! Love your blog! If you still want some recipes one of my favs is taco cups! You take ground beef and fry it with taco seasoning, mix it with rotel (diced tomatoes and chilis). Use a muffin pan with wonton wrapper layer: wonton wrapper, meat/tomato mixture, cheese, wonton wrapper, meat/tomato, and cheese. Bake until wonton wrappers brown a little and cheese is melty. Top with sour cream, hot sauce, whatever you like! :)

I am sick of being relegated to an aisle in the grocery store
As if one aisle can emulate islands

There is music singing in my blood that you can not hear over the pop music playing on the speakers
I’ve learned many things walking down these aisles
Like children will be pulled away from my brothers bc “shhh they’re too colored”
Or that the lady talking to you, with a can of pinto beans in her left hand and black beans in her right, will gesture around the aisle and whisper to you softly “you really can’t tell all these people apart” after having been informed I had no idea which one was used in refried beans.
They expect you to be one way

I’m not exactly sure what to call this? I dumped together a bag of fire roasted grains and veggies, a bag of steamed veggies, and some leftover taco meat and mixed it together. Whatever it is, it’s delicious!

I threw together fish tacos and mixed the passion fruit mojitos before carrying plates out to the deck where Katniss was watching the sunset. I handed her a plate and her cocktail and she placed her plate on her lap before removing my drink from my hand and shaking her head at me.
“No drinks,” she smirked, placing both glasses behind her.
I laughed and scratched the back of my neck. “Think we could make a one-drink exception tonight? I hand-squeezed about a million passion fruits to make that and I’m kinda excited to try it.”
She eyed me skeptically before nodding her assent and handing me back my glass. “It does sound really good.” She took a sip before nodding enthusiastically, “Yep, amazingly good.”
Taco Bell tracks down the N64 kid for an epic commercial
I’ll admit, I chuckled. The now classic N64 kid meme is back and in a Taco Bell commercial. Good job Taco Bell on mixing some of the best of my teenage years with some of the worst nights of bowel distress of my life. So, when are we getting the Jedi kid to introduce some new chalupa Taco Bell?
After work I did a bit of lifting with Sarah. We did 5 sets of 5: squats, barbell rows, and bench press.
We followed that up with an hour of Zumba. The class tonight was super high energy and I realized mid way through that I did not have enough food today to stay on the instructors level. More water and more food for me is looking like the trend.
Kevin made us some a taco salad type mix with steak and other lovely things and I got us some sweet potato corn tortilla chips to eat with it. It’s Yumma! Not the most photogenic but what it lacks in beauty it makes up for in taste.
I’ve also decided the icy parking lots and walkways are like the Devil’s playground. Melt, ice, melt!!
