Lemon Tart with fresh fruit 😋🥝🍓

CRUST

2 cups dates

½ cup raisins

1 cup almonds

½ cup coconut

2 tbsp chia seeds

Process everything in a food process until a crumble mixture forms. This can then be pressed and formed into a tart shell.

FILLING

1 cup lemon juice

2 cups water

2 tbsp vegan butter

¼ cup sweetener of choice (I used organic raw cane sugar)

3 tbsp cornstarch (mixed into a little water to create a slurry)

Combine everything in a small saucepan and bring to a boil. Boil for 1 minute. Remove from heat and let cool for 5-10 minutes. Pour into tart shell and let cool in refrigerator.
