sweet vegan

😍🍊🍫😍I am completely in love with this. It tastes like a Terry’s chocolate orange is all natural and only 14 calories a teaspoon!
I picked it up in Sainsbury’s but I’m pretty sure you can get it in other supermarkets in the uk (not sure about the rest of the world)
Honestly this is something I would recommend to anyone (even people who could not care less about what the eat) it tastes so so good!
Would be awesome swirled on bananas nice-cream , pancakes, waffles, cupcakes , warm milk, coffee or (how I roll) directly into mouth 😂

Strawberries ‘n Cream Cheese Donuts. 🐭

I had every intention of making this donut deep fried but that didn’t work out. (I’m still looking for a fabulous recipe because anything less won’t do.) So I stuck with a baked version. I then tossed the donuts in some cinnamon sugar, sliced 'em and loaded 'em with sweetened vegan cream cheese and fresh strawberries. Teehee.

Strawberries 'n Cream Cheese Donuts
Makes about 8 doughnuts

1 cup all-purpose flour
½ cup vegan sugar
1 ½ tsp. baking powder
¼ tsp. salt
½ cup unsweetened almond milk
½ tsp. apple cider vinegar
½ tsp. pure vanilla extract
1 flax egg
¼ cup vegan margarine

To make the doughnuts: Preheat oven to 350 degrees Fahrenheit. Lightly grease a donut pan.
Combine dry ingredients in a large bowl. Combine wet ingredients in a small saucepan over medium to low heat and stir just until vegan margarine is melted. Mix will be warm to the touch. Add wet ingredients to dry and mix until just combined.

Fill each donut pan well ¾ full (about 3 tablespoons of mix). Bake doughnuts for 10-12 minutes or until they are firm and spring back when you touch them. Pop them out of the donut pan and toss them in the cinnamon sugar (carefully since they’re hot!) and onto a cooling rack to cool until warm to the touch.

Cinnamon Sugar

1/3 cup granulated sugar
1 ½ tsp. cinnamon powder

Vegan Cream Cheese Frosting

½ cup Tofutti Cream Cheese
1 tbsp. powdered sugar

Using a hand mixer, beat the cream cheese and sugar until creamy. Once the donuts have cooled, slice each donut in half, spread a generous layer of cream cheese frosting, top with freshly cut strawberries and then the top of the donut half.

For lunch today I baked a bunch of sweet potato fries, and served that with hummus as a dipping sauce and a big side salad.

To make the fries:
Preheat your oven to 200 degrees Celsius. Chop your sweet potatoes length-wise into even-sized wedges. I like to cut mine quite thick, because they do shrink once baked. Spread the fries on a baking tray lined with aluminium foil. Drizzle some olive oil and season with dried Italian herbs, paprika, salt and a touch of cinnamon. Give the fries a good toss to coat everything evenly, then place it in the oven. After 15-20 mins, take them out, flip them over and put it back in for another 5-10 mins. The cooking time really depends on your oven strength/heat, so do keep an eye on the fries so they cook evenly and don’t burn.
