sweet potato black bean avocado sandwich

As everyone knows, your brain cannot function without food, particularly without healthy food. When studying, your mind is on overload and it can be stressful. Studying can last from five minutes to six hours, but keeping your brain energized is key.

I have composed a list of some of my favorite snacks along with some others. All of these are vegan friendly but are great for anyone!

-tea (any calming tea is good, also tea that is used for headaches can help because i get headaches when i work for too long) (my favorite teas are mint, fruit teas, green tea with citrus, cinnamon/vanilla) im not sure exactly what they are called but my therapist always puts different kinds of powders in my tea that have antioxidants or vitamins and theyre like super foods. you can get tons of different ones and you cant really taste them but they can add some extra umph to your health.

-smoothies (one of my favorites)
•1/2 cup black berries
•1/2 cup raspberries
•4-8 strawberries
•two (preferably frozen) bananas
•handful of spinach
•ice

-apples with peanut/almond butter

-a fruit burrito (i accidentally made this when there was no food in the house and ive loved it ever since)
•whole wheat tortilla
•butter (i used vegan butter)
•fruits of choice (i use strawberries/bananas)
•cinnamon/sugar
~spread the butter on the tortilla and heat it up to your liking.
~cut the fruit
~put the fruit in the middle of the tortilla so it fits when you roll it up
~sprinkle cinnamon/sugar and roll it up and youre good to go!

-sweet potato chips

-plantain chips (they taste like fries if you get good ones)

-veggie sandwich (you can get this at subway or make it at home and modify it to your liking)
•bread of choice
•tomatoes
•cucumbers
•lettuce
•spinach
•(at home i add avocado or black beans)
•oil

-nice cream (basically a frozen smoothie haha)
•frozen fruit of choice
•bananas (mostly the base but not mandatory)
•anything you want to add in flavor wise such as mint extract, vanilla extract, or cacao powder
~literally just blend it and it should be fully blended but a thicker, cold consistency
~if it is not thick enough blend in some ice or freeze it to your desired texture

-blue corn chips

-granola (obviously)

-fruit (if youre lazy like me)

-spinach salad
•spinach
•toppings of choice (strawberries/pine nuts for me)
•balsamic vinaigrette

-peanut butter/avocado sandwich (its amazing i swear)
•peanut/almond butter
•avocado
•cinnamon
•whole grain bread
~mash up the avocado until it is a creamy consistency
~mix in cinnamon
~spread peanut butter on both slices of bread
~spread the avocado/cinnamon mix on one side and enjoy!

-juice (if you have your own juicer)
•spinach or kale
•apple juice
•blackberries
•raspberries
•blueberries
~make it to your liking but that is my favorite combination of fruits in juice

-Silk Very Vanilla or Chocolate soy milk cartons (little 8oz ones that come in a pack but fill you up if you are just a little hungry or in a hurry and have TONS of calcium and protein) (you can get almond ones too)

-pretzels & peanut butter

-oats/oatmeal with fruit and cinnamon

-quinoa dishes (you can do anything with quinoa/rice/couscous and they are very good for you and fill you up) i personally add vegetable oil with curry and peppers

-Outshine fruit popsicles. made with real fruit juice and are wayyy healthier than other frozen treats (lemon is my favorite)

-trail mix
•any dried fruits/nuts/toppings your little studying heart desires

-SMOOTHIE KING. IF YOURE LAZY GET SOME SMOOTHIE KING.

-ABC company cookies (you can get them at Whole Foods or Smoothie King, theyre huge cookies that are good for you and taste amazing)

AND OF COURSE JUST BECAUSE IM FEELING PARTICULARLY NICE TODAY, treat yourself to an oreo or two.

Those are just some things I love eating and are somewhat healthy. Some of them require cooking, but others you can just pull out of the fridge! Happy studying! Blessed be! xx.

I like this question! For your first time grocery shopping as a vegan don’t go overboard and think you need to buy all the vegetables or processed “vegan” options. Keep it simple.

Breakfast options: 

quick oats + cinnamon + peanut butter

bagels + peanut butter + banana

bread + avocado + tomato

pancakes but make with almond milk 

Lunch: 

rice + frozen veggies + tofu

kale salad with toppings

tomato + cucumber + kale sandwich

Snacks: 

carrots + hummus

Cheerios + fruit + almond milk

cliff bars

Dinner: 

rice + black bean + corn burritos

spaghetti with mushrooms

sweet potato fries and veggie burgers

Hi there! I want to transition to vegetarian and I'm doing pretty well with that, however, I would love to transition to vegan but I feel like I wouldn't know what to eat!? I really enjoy savory foods for my main courses and I see that you eat a lot of fruit but I don't think I could ever eat that as a main meal. oh believe me i love my savory food too! i always have a savory dinner and occasionally a savory lunch or savory snacks. there are so many amazing non-fruit vegan foods! heres some meals/snacks i can think of off hand:

-Hummus with crackers, bread, or veggies

-Sandwiches (avocado, hummus, tomato, onion, greens, sprouts, mustard, etc)

-Soup (veggie soup, bean chili, mushroom soup, miso soup, minestrone, sweet potato, etc)

-Rice & beans

-Burritos! (i get rice, beans, guacamole, pico de gallo, hot sauce)

-Potatoes + veggies w mushroom or onion gravy

-Pasta w pepper, onions, tomato sauce, nutrional yeast

-Toast w avocado, lime juice, black pepper

-Pizza/flatbread (go cheesless! just load on the veggies and tomato sauce!)

-Rice w tomato sauce

-Vermicelli (rice noodles - so good!)

-Salads (they can be so interesting and exciting just get creative with things like squash, fruit, nuts, seeds, dried fruit, various dressings, etc)

-Curry (potato, rice & veggies curry w coconut milk instead of dairy)

-Baba ganoush, falafel, tabbouli

-Lentils

And these are just off the top of my head! When you keep your eyes open, you’ll be surprised how many vegan options there are! earth balance even makes vegan mac & cheese, popcorn and cheese-it type crackers. many potato chips are vegan too (just check the labels!). Theres no shortage of savory vegan junk food when you just really need it =)

1. Chickpea Quiche (new recipe I’m working on) + sides, sliced Gala apple, sliced carrots, Blissful Blueberry Banana Spelt Muffins with Strawberry Chia Seed Jam.

2. Big Burrito Bowl inspired by my Raw Taco Salad. It features a sun-dried tomato walnut “meat”, shredded kale, salsa, spiced tomato rice, green onions, black beans, and hummus. Divine!

3. Travel Meal: This is a meal I packed for travel last week. It includes a simple chickpea salad I threw together with balsamic vinaigrette, two slices of seedy spelt bread, hummus, apple, and a banana.

4. Leftover bowl of My Favourite Vegan Chili with Vegan Sour Cream. Perfect on a cold winter day!

5. Leftover soup, specifically my favourite Spiced Red Lentil, Tomato, and Kale Soup! With a huge side salad and toast with hummus. I love this lunch!!

6. A huge “kitchen sink” salad topped with leftover Cumin Lime Black Bean Quinoa Salad and hummus toast on the side.

7. Leftover bowl of cauliflower-potato-kale-lentil soup I was testing last December.

8. The Big Vegan Bowl! Packed with roasted chickpeas, sweet potatoes, quinoa, hummus, carrots, avocado, sliced cabbage, and more.

9. Avocado toast served on top of my Super Power Chia Bread.

Other lunch ideas not shown above:

10. Almond/Peanut/Sunflower Seed Butter and Chia Seed Jam on toast with fruit and veggies on the side

11. Ultimate 4-Layer Vegan Sandwich

12. Loaded Savoury Oatmeal

13. Wraps stuffed with crumbled veggie burgers or leftover casserole/burrito filling + veggies

Lunch after my physiology exam today👍 officially in spring break!! ☀️🙌 this was a chipotle black bean veggie burger on a sandwich thin with avocado, Dijon mustard, spinach, tomato, and onion, and sweet potato fries and steamed veggies on the side. So good!
